This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

8 pig feet, split
2 celery ribs, chopped
1 onion, chopped
¾ cup white vinegar
2 tablespoons red pepper flakes
2 tablespoons seasoned salt
1 tablespoon chopped garlic
1 teaspoon ground black pepper
2 bay leaves
water, or as needed to cover

Steps:

  • Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
  • Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

6 Lbs Pig’s Feet1-1/2 Cup Onion, coarsely chopped1/2 Cup Green Bell Pepper, coarsely chopped1/2 Cup Red Bell Pepper, coarsely chopped1/2 Cup Celery, coarsely chopped2 Tbs Minced Garlic3 Tbs Flour3 Qts Chicken Broth1/2 Cup Apple Cider Vinegar1/2 Cup White Cooking Wine1/4 Cup Hot sauce (optional)1 Tbs Worcestershire Sauce1 Tbs Seasoning Salt2 Tsps Italian Seasoning2 Tsps Parsley Flakes (optional)1 Tsp Paprika1 Tsp Thyme1 Tsp Black Pepper1/2 Tsp Red Pepper Flakes (optional)

Steps:

  • 1. Soak the pig’s feet in salt water for 20 mins, then scrub and rinse well. 2. Meanwhile, chop the onions, celery, and peppers into small pieces.3. Add flour to the broth and stir until well dissolved to create a slurry.4. Place a large pot over medium heat.5. Add in the pig’s feet, chopped vegetables, minced garlic, and seasonings (except for the red pepper flakes).6. Add in the slurry, vinegar, wine, and Worcestershire sauce.7. Cover with a lid and cook for 3hr 30mins..** Stir periodically so they don’t stick**8. Once done, add in the hot sauce & red pepper flakes, then stir well.
