PIKE AND BACON CAKES | JUST A PINCH RECIPES
Even if pike has quite a bit of bone inside, still at least one way exists to remove the small, spiky bones: the meat grinder. Bacon adds some fat and smoky flavor to the otherwise dry fish.

- 1. Melt some butter on the frying pan in medium high heat. Put the balls on the pan and cover it with a lid. 2. First let them cook on one side and then gently turn them over. Put the lid back on. 3. When the cakes become firmer in texture you can shake the pan with a closed lid so they move inside and keep cooking evenly. Fry for a moment more.

I love to buy those long, pork loin roasts from Sams Club when they go on sale. I usually cut them up into three-one and a half to two pound roasts, so I get at least three meals out of it. This is a very easy and flavorful way to make these wonderful pork loin roasts. I don't use a lot of herbs and spices, because my husband doesn't tolerate them well, but this is very, very delcious and it doesn't need a lot of extra spices. Just thicken the broth with a little cornstarch to make gravy and you have a great meal, all done in the crock pot. Hope y'all enjoy!

- Lay the crackers face up on a large rack over a baking sheet (or broiler pan). Scoop about 1 teaspoon of the grated Parmesan onto each cracker. Cut the package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn't fall off, wrap each cheese covered cracker with one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker, but not be pulled too taut. Place the bacon-wrapped crackers onto the rack. Place the baking sheet in the oven for about 2 hours. Serve immediately or at room temperature!
