This is a very quick and healthy vegetable side dish. Even my son, who is very picky, loves this. It works well as a snack with wine, as an appetizer, or as a side dish, especially for Asian-inspired dishes.

1 teaspoon olive oil
1 teaspoon sesame oil
4 cloves garlic, chopped
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
2 tablespoons soy sauce, or more to taste
1 tablespoon water

Steps:

  • Heat olive oil and sesame oil in a wok or skillet over medium-high heat; add garlic and decrease heat to medium. Cook and stir garlic until fragrant, about 1 minute. Add asparagus, soy sauce, and water to garlic; cook and stir until liquid is mostly evaporated, about 3 minutes. Cover wok and cook until asparagus are tender yet firm to the bite, 5 to 10 minutes more.

Designed to be part of a large shared meal, this simply-made Asian-style asparagus would make a delicious side dish for a main course. It could also be made in advance and served as a salad.

Number Of Ingredients 8

6 cloves garlic, chopped
4cm piece ginger, chopped
1½ tbsp peanut oil
1 tbsp Shaoxing wine
1 tbsp caster sugar
2 tbsp soy sauce
3 tsp sesame oil
3-4 bunches asparagus

Steps:

  • Pound garlic and ginger to a coarse paste using a mortar and pestle.

    Place peanut oil in a wok on a medium heat. When shimmering, add garlic and ginger and fry until fragrant, about a minute. Add Shaoxing wine, remove from heat and add sugar, soy and sesame oil. Once sugar has dissolved, check seasoning. Reserve sauce.

    Remove woody ends from the asparagus and blanch until just cooked, for about 4 minutes depending on thickness. Remove from water, drain well and place on a deep serving platter. Pour the sauce over the asparagus and serve.
