Here’s proof that creative side dishes can still be simple: Foil-wrapped asparagus spears strewn in crunchy cashews, fresh from a smoky grill.

1 lb fresh asparagus spears
2 tablespoons butter or margarine
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup chopped cashews

Steps:

  • Heat gas or charcoal grill. Cut 18x18-inch sheet of heavy-duty foil. Break off tough ends of asparagus as far down as stalks snap easily. Place asparagus on center of foil. Top with butter, salt and pepper.
  • Bring up 2 sides of foil over asparagus so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packet on grill over low heat. Cover grill; cook 10 to 15 minutes, rotating packet 1/2 turn after 4 minutes, until asparagus is tender.
  • To serve, cut large X across top of packet; carefully fold back foil to allow steam to escape. Sprinkle with cashews.

cloves garlic, minced

Juice of 1/2 lemon

1/2 tsp.

dried oregano

Red pepper flakes, for garnish

Kosher salt

2 c.

shredded mozzarella

Grated parmesan, for garnish

Steps:

  • In a large bowl, toss together asparagus, olive oil, garlic, lemon juice, and oregano. Season with salt and red pepper flakes.  Lay out four pieces of foil. Divide asparagus between foil, then sprinkle mozzarella into the center of each. Fold foil to seal packs.

A very simple method of cooking asparagus, where they are wrapped in foil and baked, with nothing but a little butter and salt. So easy and yet so delicious!! My 2 1/2 year old daughter liked it too! I've only tried this once and I followed the recipe exactly as set out, but I'd like to try it again, perhaps putting a few sprigs of herbs in with it. You could also try herb butter instead of ordinary butter. You can omit the salt if you like. If you are making larger quantities you might need to make more than one "parcel". You could even wrap each portion separately and serve them in the foil wrappers - I ate mine straight out of the foil, and I think it made them even nicer as they're still steaming hot and in their cooking juices, and you can keep all that flavour and aroma trapped in the parcel until you're ready to eat it! Would make a really good starter served like this. Although I suppose it depends what kind of guests you've got - if they're used to silver platters they might not be so impressed with silver foil!! But I would be! :)
