Almond Flour Banana Bread Recipe | Allrecipes image

For anyone trying to avoid wheat/grain products, this is for you! A yummy, nutty bread that is wonderful for breakfast and snacks.

cooking spray
3 eggs, beaten
1 tablespoon apple cider vinegar
3 bananas, mashed
¼ cup coconut oil, melted
¼ cup honey
1 teaspoon vanilla extract
3 cups almond flour
1 teaspoon ground cinnamon
¾ teaspoon baking powder
½ teaspoon ground nutmeg
½ teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare a bread pan with cooking spray.
  • Mix eggs and vinegar together in a bowl; add bananas, coconut oil, honey, and vanilla extract and stir until blended.
  • Sift flour, cinnamon, baking powder, nutmeg and salt together in a large bowl; stir into banana mixture until well blended. Pour batter into prepared bread pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Number Of Ingredients 11

2 cup almond meal or flour
1/2 teaspoon baking soda
1/8 teaspoon salt
2 eggs
2 egg whites
1/4 cup honey
2 tablespoons extra virgin olive oil
1 teaspoon vanilla
1 teaspoon lemon zest
2 tablespoons lemon juice
1 cup berries (fresh or frozen - any type)

Steps:

  • Pre-heat oven to 350 and line 12 muffin tins with baking cups.
  • In a medium bowl, whisk together almond flour, baking soda, and salt; set aside.
  • With the whisk attachment in a stand mixer, beat together eggs, egg whites, honey, olive oil, vanilla, lemon zest and juice over medium speed until combined.
  • Slowly add the almond flour mixture into the wet mixture while running over medium speed until fully blended.
  • Remove bowl from mixer and use a rubber spatula to gently fold in the berries.
  • Using an ice cream scoop or large spoons, drop mixture evenly into lined muffin pan. It should be enough for 12 muffins.
  • Bake for 25 minutes then let cool on a cooling rack.
