Our Southern potato bake is a homestyle dish that your family will love! It's one of our favorite Southern hash brown casserole recipes.

1 (10-1/2-ounce) can cream of broccoli soup
1 (16-ounce) container sour cream
8 ounce shredded sharp Cheddar cheese
3 tablespoon finely chopped onion
1 stick butter, melted, divided
1 (32-ounce) package frozen southern-style hash browns
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cup corn flakes, coarsely crushed

Steps:

  • Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
  • In a large bowl, combine soup, sour cream, cheese, onion, and 1/2 stick butter; mix well. Stir in hash browns, salt, and pepper; pour into baking dish.
  • In a small bowl, combine corn flakes and remaining butter; mix well. Sprinkle over potatoes.
  • Bake 55 to 60 minutes, or until heated through and golden brown.

I came up with this recipe after having done a search on Zaar and came up empty handed. It is a simple recipe and turned out exactly as I had hoped. I hope it will work for you as well as it did for me!

Number Of Ingredients 6

5 large carrots, cut diagonally into 1/2 inch slices (or use baby carrots)
4 medium white potatoes, cut into bite-sized chunks
1 medium vidalia onion, cut into eighths
2 cloves garlic, diced
6 tablespoons butter, melted
salt & pepper

Steps:

  • Preheat oven to 425 degrees.
  • Combine carrots, potatoes, onion and garlic with melted butter in 8x8" square glass pan.
  • Season generously with salt and pepper, toss.
  • Cover pan with aluminum foil and bake for 45 minutes.
  • Uncover, stir and continue baking for another 30 minutes (or until browned to your satisfaction), stirring occasionally to lift bottom portions to top to allow to brown and crisp.

  • Grease an 8x8 pan with shortening. Line with two pieces of parchment, one in each direction, greasing in between. Place peanuts in a food processor and pulse until ground into fine pieces. Heat peanut butter in the microwave for 20 seconds on 50% power to warm. Stir.In another bowl, melt candy corn in 30- to 40-second increments on 50% power. Stir between each heating. Once melted, stir in peanut butter. Immediately turn out onto a sheet of parchment paper. Form into a rectangle a little larger than the pan. No need to be exact. Press the peanuts into the mixture. Fold into thirds, like a letter. Use a rolling pin to roll into a rectangle of about the same size as before. Press cornflakes on top, crushing them as you do. Fold into thirds in the same manner. Roll flat. Fold into thirds again. Once more, roll flat into a square about the size of the pan. Press into the pan, smoothing with your hands. Let the mixture set up about 15 minutes. Lift out of the pan and cut into pieces. Place on a wire rack and let cool completely. Once cool, melt chocolate wafers as directed on the package. Dip and place on a waxed paper-lined cookie sheet. Let chocolate set up before storing or packaging. Store at room temperature in an airtight container.
