I’m gonna say the C word, canapé. I had my first one at the age of 13 when I was doing work experience in this beautiful restaurant called The Starr in Dunmow. The food was excellent and they would always start the customer’s experience with a drink and something to nibble. It was totally logical and exciting – pairing a glass of something delicious with something salty and textured is, for me, the perfect combo. This is my expression of the first canapé I tried, all those years ago.

50 g Parmesan cheese
100 g Lincolnshire Poacher or Cheddar cheese
50 g unsalted butter
100 g plain flour
50 g fine semolina
3 large free-range eggs

Steps:

  • This works great as a stand-alone recipe, but also as a component in Jamie’s Sunny Gathering from Together – see the full collection of menus here. GET AHEAD Finely grate all of the cheese. Place the butter in a medium pan on a medium heat with 250ml of cold water. As soon as the mixture comes to a rolling boil, tip in the flour, semolina and a pinch of sea salt. With a wooden spoon, work carefully, quickly and fairly vigorously to beat it all together until smooth and starting to come away from the sides of the pan. Remove from the heat and beat for 30 seconds, then, one at a time, beat in the eggs, followed by the grated cheese. Cover and refrigerate for at least 2 hours. Line a baking sheet with greaseproof paper. With wet hands, divide the mixture into 24 pieces and roll into glorious, shiny balls, lining them up on the tray as you go. Cover and return to the fridge overnight. TO SERVE Preheat the oven to 200°C/400°F/gas 6. Bake uncovered for 20 minutes, or until golden. Enjoy warm with a glass of something cold and sparkling.

1 onion
olive oil
4 cloves of garlic
500 g frozen spinach
1 x 320 g sheet of all-butter puff pastry
4 x 130 g salmon fillets, skin off, pin-boned, from sustainable sources
2 large free-range eggs
1 heaped tablespoon red pesto
1 lemon

Steps:

  • Preheat the oven to 220°C/425°F/gas 7. Peel and chop the onion and place in a large non-stick pan on a medium heat with 1 tablespoon of olive oil. Peel, finely slice and add the garlic. Finely grate in the lemon zest, then cook for 10 minutes, or until softened, stirring regularly. Stir in the spinach, cover, and cook for 5 minutes, then remove the lid and cook for another 5 minutes, or until all the liquid has cooked away. Season to perfection. Unroll the pastry and place it, still on its paper, in a baking tray. Spread over the spinach, leaving a 5cm border all the way around. Sit the salmon fillets on top, 1cm apart, then use the paper to help you fold in the pastry edges to snugly encase the salmon, leaving it exposed on the top. Beat the eggs and use some to brush the exposed pastry, then bake at the bottom of the oven for 15 minutes. Meanwhile, beat the pesto into the remaining egg. When the time’s up, pull out the tray and pour the egg mixture over the salmon and into the gaps. Return to the bottom of the oven for a final 15 minutes, or until the pastry is golden and the egg is just cooked through. Serve with lemon wedges, for squeezing over.

Gather together the dough to form a soft, slightly sticky, mass. Lightly dust the work top with flour, place the dough in the middle and lightly dust the top with flour. Gently flatten the dough with your hands to 3cm/1¼” thick. Press a round pastry cutter or upturned coffee cup into the dough to cut out circles. Gather the off-cuts into a ball of dough, gently flatten and cut out further circles. Brush the top of the scones with some milk. Lift the dough circles onto the prepared baking tray. Bake for 12-15 minutes until golden brown. Transfer the scones to a wire rack to cool.
