What a refreshing recipe! Simple and delicious, this is an easy cake to whip together on short notice.... oh, and it tastes great too!

1/2 cup(s) shortening
1 cup(s) sugar
2 - eggs
2 1/4 cup(s) all purpose flour, sifted
1/2 teaspoon(s) salt
3 teaspoon(s) baking powder
3/4 cup(s) milk
1 teaspoon(s) vanilla extract

Steps:

  • Pre-heat oven to 350. Bake about 30 minutes or until tooth pick comes out clean.
  • Cream shortenting (Crisco), sugar and vanilla until light and fluffy. Add eggs and beat thoroughly. Add ingredients ALTERNATLY with milk, mixing after each addition.
  • Bake in prepared (greased and lightly floured) 8" round cake pans.

2 c. sugar
1 c. shortening
2 large eggs
1/2 c. cocoa
1 c. buttermilk
2 1/2 c. flour
2 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla
1 c. boiling water

Steps:

  • Cream sugar and shortening well; add in large eggs and beat. Sift together flour and cocoa. Add in flour-cocoa mix and remaining ingredients, except boiling water, and mix; then add in boiling water and mix. Batter will be very thin. Pour into 2 (8 or possibly 9 inch) pans.Bake in moderate 350 degree oven for about 30 min. Frost with Fudge Frosting.
