Zucchini Walnut Bread Recipe | Allrecipes image

A delicious, moist, bread which may be glazed with confectioners' sugar, even better after frozen.

Yield 2 loaves

Number Of Ingredients 12

1 cup chopped walnuts
4 eggs
2 cups white sugar
1 cup vegetable oil
3?½ cups all-purpose flour
1?½ teaspoons baking soda
1?½ teaspoons salt
1 teaspoon ground cinnamon
¾ teaspoon baking powder
2 cups grated zucchini
1 cup raisins
1 teaspoon vanilla extract

Steps:

  • Whisk together flour, baking soda, salt, cinnamon, and baking powder.
  • In a large bowl, beat the eggs. Gradually beat in sugar, then oil. Add flour mixture alternately with zucchini into the egg mixture. Stir in the raisins, walnuts, and vanilla. Pour batter into two 9 x 5 inch greased and lightly floured loaf pans.
  • Bake on lowest rack of the oven at 350 degrees F (175 degrees C) for 55 minutes. Let cool for 10 minutes in the pan, then turn out onto racks to cool completely. To freeze, wrap loaves in plastic wrap, and then wrap in heavy freezer paper. Will keep indefinitely.

Yield Makes 8 servings; 16 slices

Number Of Ingredients 11

3 large eggs
2 cups sugar
1 cup vegetable oil
2 cups grated zucchini
½ teaspoon vanilla
3 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350°. Grease 2 loaf pans (9 in.). In a large bowl, beat eggs until frothy. Add sugar, oil, zucchini, and vanilla and stir until well mixed. Add flour, cinnamon, salt, baking powder, baking soda, and nuts; stir until just combined.
  • Pour batter into pans. Bake until a toothpick inserted in the center of each loaf comes out clean, 50 to 60 minutes. Cool loaves 10 minutes in pans, then turn out onto a rack and cool completely before slicing.

It's from "Country Fair Cookbook" All recipes in this book are Blue Ribbon winners from fairs around America prior to it's publication in 1975. Wrap and refrigerate overnight to allow the flavor to mellow. I have also made this as muffins. Just lower the temperature. Now that I live in Australia I make this using the Aussie measuring cups and spoons and it turns out fine. I've also made it with half carrot and half zucchini. And other times I've used half wholewheat flour and half plain, just for a change and it works well too. My husband loves it and says it's more like a cake then a bread since it's so moist.

Mmmm Mmmmm. This is my favorite kind of sweet bread. In my book it far exceeds that old banana bread by a mile. But, of course, I don't really like banana bread so I'm pretty much prejudiced!! LOL I got this one in either the 70's or 80's and am adding raisins to match the picture I found of the, otherwise, exact same recipe that I have. I think the raisins would be a good addition but you can leave them out without consequence. LOL You can also bake them in a muffin pan if you like!!
