This is the method used by restaurants to whip butter to make it easier to spread, and for economical reasons to make butter go a lot further too. You can make it fancy like restaurants do by putting this mixture into a cake decorating tube with a fancy tip and pipe it into small dishes for individual servings. I have even used a plastic bag, cut off the corner, placed a fancy decorating tip in the corner, added the butter mixture and piped it into tiny dishes I got at the dollar store. One for each dinner guest is a nice touch. I store the whipped butter in a glass covered container on the counter top in cooler weather. In warmer weather I store it in the refrigerator and bring it to room temperature before using.

A lot of Texas Roadhouse Butter recipes around the interweb use powdered sugar in the ingredients and more of it than what I believe Texas Roadhouse uses. Some of the copycat Texas butter recipes I see online would be great over a cinnamon roll or a dessert. Even this recipe may have a frogs hair too much cinnamon but it's still hella good!The butter at Roadhouse is served before and during dinner with their fresh made yeast rolls. If you're Texan it's a replacement to chips and salsa we use to judge TexMex joints.  The butter has light hints of cinnamon, honey, and salt. The magic comes from the whipped butter. Every time I devour it I think "oh yeah a hint of cinnamon" just below dessert grade. Less is more with this one.

1/4 lb butter (stick unsalted , room temperature)
2 tbs sugar (fine or powdered)
1 tbs honey
1/2 tsp ground cinnamon
1/4 tsp kosher salt

Steps:

  • Set stick of butter on counter.
  • Add everything except butter to mixing bowl.
  • Mix everything well until all the dry ingredients are wet.
  • When butter is room temperature add to mixing bowl.
  • Whip by hand with whisk or by a machine until fluffy and smooth.

  • I don’t know if you can buy powdered apple(just get the freeze dried ones if you don’t want to take this long), but it’s pretty easy to make, just time consuming. I peeled and cored 2 apples cut them into 1/4 inch thick slivers and put them in my dehydrator for 12-15 hours, then tossed them in the food processor until they were a nice powder. You can coat them in lemon juice if you don’t want them to turn brown, but they taste the same either way. You can sun dry them too, but it takes A LOT longer. You can also set them on a rack in the oven at 125-150degrees for a couple hours(not sure how long because I don’t do it that way but I’ve heard 6-8) and keep checking them until they’re dried out to where they brake like dry, stale bread. A comment was left about using fruit crisps. I’ve actually tried it before and it did indeed work, but it seemed to clump up a little. Not that big of a deal and still very good, so if you can find them at a store near you, or just order them online, it’s definitly a quick option to drying your own. Whip up the butter. Add honey and whip again. Add cinnamon and whip yet again Add the powdered apple a little at a time(1/2 tbsp roughly) whipping in between each addition. Check the flavor after adding half of the powdered apple since apple’s differ in size and aren’t exact measurements and just mix to taste.
