1/3 cup tamarind paste
1 1/2 cups beef broth, pre-heated
1/4 cup red wine vinegar
3 tablespoons dark brown sugar
2 garlic cloves, minced
1 tablespoon fresh ginger, grated

Steps:

  • In a saucepan over medium heat, bring the vinegar and brown sugar to a low boil. Whisk until the sugar is dissolved and reduce by half to produce a syrup.
  • Reduce the heat to low and stir in the pre-heated beef broth, (I do this in the microwave until it's about 110 degrees F.) Then stir in the tamarind paste, garlic, and the ginger. Allow to reduce just a little and then strain the sauce into a serving bowl.
  • NOTE: Tamarind sauce can be obtained at an ethnic grocer (some sell online).

Tamarind sauce (also called tamarind chutney) is a delicious dipping sauce that has tangy, sweet, salty, and spicy flavors. It is the perfect condiment for fried snacks, especially pholourie, saheena, aloo pie and more.

12 tamarind pods
1 cup hot water
50 g sugar
1 tsp salt
2 cloves garlic
6 chadon beni leaves
¼ hot pepper

Steps:

  • Remove the tamarind shells and fibers.
  • Separate the seed segments of the pulp.
  • Add hot water to the pulp.
  • Rub and squeeze the pulp in the water for a few minutes.
  • Grind the garlic, chadon beni leaves and hot pepper together.
  • Add the ground seasoning to the tamarind pulp and water.
  • Mix in the sugar and salt.
  • Taste test and adjust to your taste preferences.
  • Serve as a dipping sauce alongside fried snacks or use as a topping.
  • Bottle and refrigerate the remaining sauce.

Sauce should be a drizzling consistency.  Add garlic and chilies, if using. Taste and adjust to your liking.  Set aside at room temperature to let flavors bloom. Sauce can be prepared hours ahead of time. Serve in individual dipping sauce containers.
