- Heat olive oil and butter in a large saucepan over medium heat. Saute onion, celery and carrots until soft. Add veal, pork, beef and pancetta, and cook until evenly brown, 15 to 20 minutes. Pour in milk, and cook until liquid has evaporated, about 15 minutes. Stir in tomato sauce and beef broth. Cover, and simmer 2 1/2 hours.

- <p><span id="docs-internal-guid-7bb81ecf-7fff-e295-72c8-48e6fd269486">In a large pot over medium heat, cook the pancetta or bacon for 5 minutes.</span></p>
- <p><span id="docs-internal-guid-d4251d30-7fff-b4f7-cf9b-e71bde74e137"></span></p> <p dir="ltr" role="presentation">Add the chopped carrots, celery and onion and cook until softened, about 5 minutes.</p>
- <p><span id="docs-internal-guid-27314cf5-7fff-9ea4-4af7-286f7d786fe2">Add the ground beef and cook until the meat is browned and no longer pink, about 5 minutes.</span></p>
- <p><span id="docs-internal-guid-62245a37-7fff-ec2a-83a4-27004851c0a2"></span></p> <p dir="ltr" role="presentation">Raise the heat to high and pour in the red wine. Cook while stirring until the wine evaporates, about 2 minutes.</p>
- <p><span id="docs-internal-guid-810c600c-7fff-92e3-2e95-8d30c268069e">Stir in the peeled tomatoes and tomato paste.</span></p>
- <p><span id="docs-internal-guid-58e8a5a9-7fff-dc37-d610-8078e6fd93d3"></span></p> <p dir="ltr" role="presentation">Lower the heat to medium-low, cover the pot and cook for 1½ hours, stirring occasionally. Check the sauce every 30 minutes to make sure the sauce at the bottom of the pot is not burning. The sauce should reduce by half its volume at this point. Taste and season with salt and pepper.</p>

- Bring a large pot of water to a boil. Season with salt; add pasta and cook, stirring occasionally, until 1 minute before al dente. Drain, reserving 1/2 cup pasta water. - Skim The Ragu: Use a spoon to remove any accumulated fat and discard it. Then, pour in the milk or cream, in four additions, over the last 20 to 30 minutes of cooking.
