Spicy Korean Rice Cakes (Tteokbokki) Recipe - NYT Cooking image

This popular street-food dish, called tteokbokki, is a garlicky, richly spiced dish of rice cakes bathed in red chile paste. Tteokbokki (pronounced duck-bo-key) got its own festival, spinning off from the larger annual Seoul festival of rice cakes, or tteok.

8 ounces fresh or thawed frozen tteok (see note)
4 ounces beefsteak, such as chuck or sirloin, very thinly sliced
1/2 teaspoon soy sauce
2 teaspoons sesame oil
2 cloves garlic, minced
1 small onion, thinly sliced
2 cups green cabbage, cut crosswise into large pieces (optional)
1 to 2 tablespoons gochujang (Korean chile paste)
1 to 2 teaspoons sugar
2 scallions, cut into 1-inch batons
Sesame seeds

Steps:

  • Soak tteok in cold water to cover while preparing the other ingredients, about 10 minutes. Drain on paper towels.
  • Combine beef with soy sauce, 1 teaspoon sesame oil and garlic.
  • Heat a wok or skillet over high heat until very hot. Add beef mixture and stir-fry just until lightly browned, 1 minute. Add onion, scallions, and cabbage, if using, and stir-fry until crisp-tender, 2 to 3 minutes.
  • Add gochujang and mix. Add about 1/3 cup water, remaining teaspoon sesame oil, sugar and tteok. Mix and let simmer until sauce is thick and tteok is soft, adding water a little at a time as needed. Adjust seasonings with sugar and gochujang.
  • Mix in scallions and serve hot, sprinkled with sesame seeds.

2 cups rice cake (tteok)1 sheet of fish cake (about 5 ounces)2 green onions1 Tbsp hot red chili pepper paste (gochujang)1 tsp soy sauce¼ tsp white vinegar1 Tbsp white sugar¼ tsp ground black pepper½ tsp Dasida beef flavor soup stock powder¼ tsp fish sauce1 Tbsp olive oil1 tsp sesame seeds (optional)

Steps:

  • Rinse the rice cakes and drain well. 
  • Put a medium-sized pan onto medium-high heat. Add in olive oil and the rice cakes, stir well and cook until the rice cakes get soft (about 6-8 minutes). Add about a tablespoon of water at a time, so the rice cakes don’t burn to the bottom of the pan. 
  • Next, add the fish cake pieces and stir fry for another 2 minutes. 
  • Add the remaining ingredients to the frying pan and cook for another 2 minutes. Continue adding a tablespoon of water at a time to ensure nothing burns to the bottom of the pan.
  • Sprinkle with sesame seeds (optional). Enjoy!

  • To Make the Filling Grind the sesame seeds in a grinder or blender for about 20 secs. Then transfer ground sesame to a bowl and mix in ½ cup of brown sugar and a pinch of salt. To Make the Dough Prepare 3 cups of rice powder and sift into a large bowl. Equally divide the rice powder into 3 bowls. Each bowl should now contain 1 cup of rice powder. To prepare the basic white dough, add 3 tbsp boiling hot water to the rice powder and mix it with a spatula. When the dough is cool enough to handle, knead for about 5 mins, then wrap with cling film and set aside. To prepare the green dough, add 1 tsp of ssukgaru (mugwort powder) and 3½ tbsp boiling hot water to the rice powder and mix it with a spatula. When the dough is cool enough to handle, knead for about 5 mins, then wrap with cling film and set aside. To prepare the pink dough, add a pinch of strawberry Jell-o powder and 3 tbsp boiling hot water to the rice powder and mix it with a spatula. When the dough is cool enough to handle, knead for about 5 mins, then wrap with cling film and set aside. To Assemble the Songpyeon Cut off a piece of the dough and roll tightly between your palms in order to make a ball. Press in to the ball with your thumb to stretch the dough slightly outwards and then use both of your thumbs to expand the opening. Fill the well with ½ tsp of sesame filling, then seal tightly by squeezing the edges together. When the rice cake is sealed, shape them in to a half moon shape and set aside. Repeat until all the dough has been used. To Cook Prepare a steamer by bringing water to boil over high heat. Using pine needles or a damp kitchen cloth, line the bottom of the steamer to stop the rice cakes from sticking to the steamer. When the water begins to boil, place the rice cakes on to the steamer ensuring that the pieces do not touch each other. Cover the rice cakes with a final, thin layer of pine needles if using. Cover the steamer and let steam for about 20 mins. Prepare a bowl of cold water and transfer the rice cakes in to the bowl when they've been cooked. Rinse the dumplings and then transfer to a rack to drain. Lightly coat your hands with the sesame oil and use them to rub the oil on to the rice cakes. To Serve Serve immediately and while warm! Enjoy!
