1-1/2 pounds Yukon Gold potatoes (about 3 medium), cut into wedges
1 tablespoon olive oil
1/4 cup dry bread crumbs
1-1/2 teaspoons paprika
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon ground cumin
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

  • In a large bowl, toss potatoes with oil. Combine the remaining ingredients; sprinkle over potatoes and toss to coat. , Arrange potatoes in a single layer in a 15x10x1-in. baking pan coated with cooking spray. , Bake, uncovered, at 425° for 40-45 minutes or until tender, stirring once.

Made these last night for dinner and they were scrumptious. Very basic recipe with a ton of flavor.

Prep Time 10 minutes

Cook Time 40 minutes

Number Of Ingredients 4

2 baking potatoes, unpeeled
2 tablespoons olive oil
salt and black pepper (to taste)
1/2 teaspoon dried thyme

Steps:

  • Preheat the oven to 425°.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise.
  • You'll have 6 long wedges from each potato.
  • Place the potatoes on a sheet pan with the olive oil, salt, pepper, and thyme.
  • Toss all the ingredients together, making sure the potatoes are covered with oil.
  • Spread the potatoes in a single layer with 1 cut-side down.
  • Bake the potatoes for 35 to 40 minutes, turning to the other cut side after 20 minutes.
  • Bake until they are lightly browned, crisp outside, and tender inside.
  • Sprinkle with additional salt, if desired.

Cook the potatoes in the stock until almost tender, about 5 to 8 minutes, depending upon the size of the potatoes. Remove the lid and allow the stock to evaporate, about another 5 minutes. Once the stock has evaporated pop each potato using a ladle or large spoon, creating a small crack in each, but do not smash. Allow the potatoes to brown on each side, another 5 minutes, and re-season with salt and pepper, if necessary or desired. Remove the browned potatoes from the skillet and place onto a serving platter, garnished with the parsley.
