Famous Sichuan Water Boiled Spicy Fish

500 g fish fillet
200 g bean sprouts
2 tsp. cornstarch
1 tsp. salt
1 tbsp. cooking wine
1/2 tbsp. egg white
1 tbsp. oyster sauce
1/2 tsp. ground white pepper
2 tbsp. cooking oil (, divided )
1.5 tbsp. doubanjiang
5 garlic cloves
2 green onion ( , separate white and green part)
1 inch root ginger ( , peeled and sliced)
1 tsp. Sichuan peppercorn
1 tsp dou-chi (, chopped)
4 dried chili red pepper
pinch of salt if needed
4 cups Water
5 chili pepers
1 tbsp. chopped garlic
1/2 tbsp. chopped scallion
1 tsp. Sichuan peppercorn
2 tbsp. hot vegetable oil (, for pouring)

Steps:

  • Prepare fish |Cut the fillet into thin slices and then marinate with all marinating sauce. Set aside for 30 minutes or even longer.  Then add cornstarch and mix well before making the dish.
  • Add oil in wok and fry the doubanjiang over slow fire until the oil turns red. Then place garlic, ginger and scallion in and fry until aromatic. Then add dou-chi, Sichuan peppercorn and toasted chili pepper (half). Continue cooking for half minutes.
  • Load the wok with around 4 cups of water. Let the base simmer for 10 minutes over slow fire. 
  • During this period, take another pot and blanch bean sprouts for 1 minutes and then place in the bottom of serving bowl to support fish slices. Then place the fish slices in and cook for 3 minutes. Transfer the fish slices to serving bowl.
  • Add soup base to serving bowl, recommend using a filter to remove the doubanjiang flakes. 
  • Add the remaining chili pepper flakes, Sichuan peppercorn, chopped garlic and chopped scallion on top. Pour around 2 tablespoons of hot oil on top.  Serve hot!

1 piece grass carp
10gram Doubanjiang
200 g pork
7 Millet pepper
1 teaspoon pepper
2 pieces Green onions
1 tuo ginger
1 head garlic
2 pieces Shallots

Steps:

  • The fish breaks open from the back
  • Sprinkle some salt on the fish and marinate it with cooking wine
  • Boil a pot of water in a pot, add some scallions and ginger slices in the water, and two spoons of salt (the soup with salt is not easy to rot when the fish is cooked)
  • After the water is boiled on a high fire, we put the marinated fish down to the pot and boil it. After the water is boiled again for two or three minutes, the fish can be picked up and placed on the pot for use.
  • Stir fried pork with oil in the pot
  • When the meat is out of the oil and fragrant, stir fry the ginger and garlic together to create a fragrance
  • Stir fry with Douban
  • Add water, one and a half bowls of rice is almost done
  • Add pepper, one and a half tablespoons of sugar, salt, monosodium glutamate, and chicken essence to the soup and bring to a boil
  • After the soup is boiled, add the millet pepper and green onion segments
  • Immediately add water starch, and wait until the soup is faintly thick.
  • Turn off the heat, pour the broth on the fish, sprinkle with chopped green onions, this is the way to do this for the water fish

  • Trim the spring onions and fennel (reserving any leafy tops), peel the carrot, then slice them all ½cm thick. Halve the tomatoes. Peel and finely slice the garlic and chilli. Squash and destone the olives. Put a large frying pan on a high heat with 1 tablespoon of olive oil. Stir in the onions, fennel and carrot, followed 4 minutes later by the tomatoes, garlic, chilli and olives. Toss regularly for 2 minutes while you lightly score the fish on both sides (this will help flavour and heat to penetrate as it cooks). Lay the fish on top of the veg, stuff half the herbs into the cavities, then pour over the wine and let it reduce by half. Add about 300ml of water, to come 1cm up the side of the pan. Cover and leave to thunder away on a high heat for 8 minutes (boiling underneath, steaming on top means fragrant veggies). Pick the remaining herb leaves, finely grate the lemon zest over them, then chop and mix together. Uncover the fish and baste with its juices for 1 minute. To check the fish is cooked, go to the thickest part up near the head – if the flesh flakes easily away from the bone, it’s done. Remove to a plate, spoon over the veg and juices, drizzle with extra virgin olive oil, scatter over the lemony herbs, then squeeze over the lemon juice. Great served with bread to mop up that irresistible sauce, or with new potatoes, couscous or rice.
