Viennese Hot Chocolate Recipe - Food.com image

This recipe is adapted from one in the wonderful French culinary encyclopedia, "Larousse Gastronomique." It is delicious and pretty to look at.

Total Time 20 minutes

Prep Time 15 minutes

Cook Time 5 minutes

Yield 4-6 cups

Number Of Ingredients 6

3 cups milk, divided
7 ounces bittersweet chocolate or 7 ounces German chocolate
1 tablespoon white sugar
1/3 cup whipping cream, very cold (also known as heavy cream)
1 teaspoon vanilla
2 tablespoons confectioners' sugar

Steps:

  • Melt together over low heat just 1 cup of the milk with all the chocolate. Bring to a slow, rolling boil.
  • While the mixture is boiling, use a separate saucepan to heat the rest of the milk with the white sugar. Whisk it for several minutes or until the sugar has dissolved. Combine with chocolate mixture and keep on medium heat.
  • On high speed, beat together the whipping cream and vanilla. Beat in the confectioners' sugar, and continue beating briefly just until the whipped cream forms soft peaks.
  • Remove the chocolate from the heat, and divide into cups. Top each cup with a generous dollop of whipped cream and serve. Enjoy!
  • Makes about 4 cups, to serve 4 to 6.

  • Make The Chocolate Ganache: For the ganache, place the remaining 5 ounces of chopped chocolate in a heatproof bowl. In a small saucepan, mix together the cream, honey, butter and salt over medium heat until just simmering and combined. Pour the cream mixture over chocolate and allow to stand, about 2 min. Using a rubber spatula, gently stir together the chocolate mixture until glossy and smooth.  Allow mixture to cool until no longer warm to the touch, stirring often, about 15 to 20 minutes. Coat The Cake In Ganache: Working quickly, pour the ganache over the glazed cake, allowing the chocolate to run over the edges. If necessary, use a small offset spatula to cover any bare spots. Transfer the cake to the refrigerator to allow glaze to set, about 30 minutes. Serve with whipped cream.
