after the success of indian style veg macaroni pasta recipe, i tried making italian style white sauce pasta in my veg recipe book by garu’s kitchen. the key for making perfect white sauce pasta is making perfect white sauce. this white sauce is so rich, creamy, cheesy, smooth and tasty.

Number Of Ingredients 14

penne pasta - 1 ½ cup (you can use any shaped pasta)
milk - 1 ½ cup (boiled and cooled)
maida - 1 tbsp
butter - 2 tbsp
onion - ½ cup (chopped)
red capsicum - ½ cup (chopped)
green capsicum - ½ cup (chopped)
broccoli - ½ cup
oregano - 1 tbsp
red chilli flakes - 1 tbsp
cheese - 1 tbsp (grated)
black pepper powder - 1 tsp
salt - to taste
olive oil - 1 tbsp

Steps:

  • boil 6-7 cups of water in a deep pan.
  • after the water comes to a boil then add the pasta.
  • now add salt, oil and mix well.
  • cook on a medium flame for 15-20 minutes or till the pasta is 90% cooked.
  • to check the pasta is cooked or not, press it with your hands. pasta has turned soft.
  • strain the pasta in a sieve to drain the excess water.
  • wash the pasta with cold water so that cooking process is stopped and excess starch is removed. keep the boiled pasta aside.
  • heat 1 tbsp butter in a non-stick pan.
  • once the butter melts, add the plain flour to it and cook for a few seconds.
  • once it changes the colour slightly, now add the milk. keep whisking and bring it to a boil. cook it on low flame until it's thick.
  • once the sauce is thick, get it off the flame.
  • now heat 1 tbsp butter in a non-stick pan.
  • add the chopped onion and let it cook for 2-3 minutes. cook till the onions are translucent.
  • then add finely chopped capsicums, broccoli. let them cook for 7-8 minutes.
  • now add boiled penne pasta to the above mixture and mix well.
  • add the black pepper powder, oregano, salt and red chilli flakes and stir well.
  • now add the white sauce to the above ingredients and mix well. cook for another few minutes.
  • add cheese into it and cook for another 1-2 minutes.
  • the delicious hot italian style white sauce pasta or vegetable pasta in white sauce is ready to be served.

200 gram Rotini Pasta
1 tablespoon Garlic
1/4 cup Carrot
1/4 cup Green Beans
1/4 cup Green Bell Pepper
1/4 cup Sweet Corn
1/2 teaspoon Crushed Red Pepper Flakes
1/4 teaspoon Dried Oregano
1/4 teaspoon Dried Thyme
3 tablespoon Olive Oil
1 cup Bechamel Sauce
2 tablespoon Parmesan Cheese
to taste Salt

Steps:

  • Boil water enough to cover pasta. Add some Salt (to taste) and Olive Oil (1 tablespoon) and add the Rotini Pasta (200 gram). Cook well, but do not overcook the pasta.
  • Once done, drain out the excess water and pour in some cold water. Let it soak for 2 minutes and then drain the water and keep aside. This is done so that once cooled the pasta wont stick to each other.
  • To a pan, add Olive Oil (2 tablespoon) add Garlic (1 tablespoon) and saute for a minute.
  • Now add Green Beans (1/4 cup) and saute for a few minutes.
  • Then, add Carrot (1/4 cup) and Green Bell Pepper (1/4 cup) and saute until done.
  • Add Sweet Corn (1/4 cup) and combine well.
  • Add Salt (to taste), Crushed Red Pepper Flakes (1/2 teaspoon), Dried Oregano (1/4 teaspoon), and Dried Thyme (1/4 teaspoon). Be careful while adding salt as the sauce has salt in it. Combine well and switch off the flame.
  • To a pan pour the Bechamel Sauce (1 cup) and let it boil. Now add the cooked pasta and sauteed vegetables. If you are adding Parmesan Cheese (2 tablespoon), add now.
  • Combine well and switch off the flame. Serve hot and enjoy!
