TURTLE COOKIES RECIPE - FOOD.COM

Turtle Cookies Recipe - Food.com image

A recipe I got from a Gooseberry Patch cookbook, contributed by Cheri Emery, using a cake mix. It's posted as written, but I used 5 pecan halves to give them 4 legs and a head!:) I also added a rolo inside each so when you bite into them you get caramel too! It's important the dough is completely covering the rolo or it will seep out!

Total Time 30 minutes

Prep Time 20 minutes

Cook Time 10 minutes

Yield 20 serving(s)

Number Of Ingredients 10

18 1/2 ounces fudge cake mix
1 tablespoon water
2 tablespoons oil
2 eggs
1/2 lb pecan halves
1 tablespoon butter
2 tablespoons baking cocoa
1/2 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Combine dry cake mix, water, oil and eggs, mixing well and set aside.
  • Arrange pecans in clusters of 3 on greased baking sheets.
  • Shape dough into 1 inch balls.
  • Center each on a cluster of pecans and flatten slightly.
  • Bake 8-10 minutes at 375*.
  • Cool and frost.
  • FROSTING: Sift powdered sugar and cocoa, set aside. Cream butter and vanilla, then add the powdered sugar mixture and milk alternately until desired consistency.

MCKENZIE'S TURTLE COOKIES | JUST A PINCH RECIPES
This recipe was one of many McKenzie's Pastry Shoppes recipes in New Orleans that was thought to be lost forever- because the bakery closed it's doors forever-due to bankruptcy in 2001 (Katrina Hurricane)-- but fear not many of the recipes have been resurrected through a "Cooking Up a Storm" cookbook and "Exchange Alley" where folks traded lost and found recipes. Cajun Chef Ryan has brought this recipe back to life! I hope you enjoy this recipe. I have given a quick version of this recipe too!

HOMEMADE TURTLES RECIPE | SOUTHERN LIVING
A decadent combination of our favorite dessert components, turtles are the ideal treat to satisfy a hankering for chewy caramel and sweet chocolate with the savory crunch of toasted pecans. While they may seem like a tricky confection to make, our recipe makes the whole process quite simple using ingredients like sweetened condensed milk and corn syrup for a foolproof caramel. Boil brown sugar, condensed milk, corn syrup, and butter for a few minutes on the stovetop to create a rich and aromatic caramel. While the mixture is still hot, stir in vanilla and pecans and scoop the sticky filling into mounds on a parchment paper lined baking sheet. Then chill until the mounds set into chewy disks of caramel and pecan. Melt semisweet chocolate and dunk the mounds in the chocolate and remove to form a thin layer of chocolate on the mounds. Finish the disks with a sprinkling of flake salt before placing them back in the fridge to encourage the chocolate to solidify. The final product is a thin layer of chocolate covering a salty-sweet filling that is both toothsome and creamy as it melts in your mouth.

  • Over a double boiler or in the microwave, melt chocolate until smooth. Coat each caramel mound in chocolate, gently lifting the mound out of the chocolate with a fork allowing excess chocolate to drip off. Return chocolate covered mound to its place on baking sheet. If using, sprinkle surface with flake salt while chocolate is still warm. Repeat with remaining mounds, chocolate, and flake salt. Once all turtles are coated, return baking sheet to refrigerator to allow chocolate to harden, about 30 minutes. Store in an airtight container and keep in the fridge.

PECAN TURTLES RECIPE: HOW TO MAKE IT
I made these "turtle-like" concoctions one Christmas for a sweets exchange. My dad saw them on the counter waiting to be boxed up and couldn't believe I made them. He said they looked like they came from a candy shop. That's the best compliment I've ever received. -Carrie Burke Conway, Massachusetts
