Golden Turmeric Fish | Better Homes & Gardens image

Island flavors like coconut, lime, ginger, and mango make this quick and easy fish recipe taste like something you'd order at a restaurant during a beach vacation. While this recipe is delicious and doable any time of year, we love to use it to transport to another land on a cold winter day.

2 tablespoons unrefined coconut oil
2 tablespoons fresh lime juice
1 tablespoon grated fresh ginger
1 teaspoon ground coriander
½ teaspoon ground turmeric
? teaspoon cayenne pepper
4 5-6 ounces red snapper fish fillets
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Purchased mango chutney
Chopped fresh cilantro
Lime wedges

Steps:

  • Preheat broiler. In a small bowl combine coconut oil, lime juice, ginger, coriander, turmeric, and cayenne pepper. Season fish with salt and black pepper. Spread skinless sides of fish with coconut oil mixture.
  • Place fish on a greased broiler pan. Broil 4 inches from heat 8 to 10 minutes or until fish flakes easily. Serve topped with chutney and cilantro.

This Baked Fish with Turmeric is flavorful and easy to make. It is slightly crispy and perfectly seasoned with an aromatic blend of spices.

2 whole snapper (medium size cleaned and gutted)
1 lemon or vinegar to clean the fish
1 teaspoon Noubess original hot and spicy sauce (or less if your palate is sensitive to the heat of hot pepper.)
1 tablespoon of Noubess fish and seafood seasonings
2 tablespoons of Olive oil
1 teaspoon of Turmeric powder
Salt (optional)
Lemon/lime/vinegar to clean the fish

Steps:

  • Clean your fish by removing the scales and the entrails. Read this article (https://www.caribbeangreenliving.com/an-easy-and-simple-way-to-clean-your-fish/) to learn how to easily clean your fish if your fishmonger hasn’t cleaned it.
  • Either leave the fish whole or cut it in half if it will be too big/long for your baking dish
  • With a knife, make slits about 2 - 3 on each side. There is no need to make deep cuts, just enough to cut through the skin and the seasoning to hide in there.
  • After cleaning your fish, pat dry with a paper towel
  • Prepare the seasoning by mixing all the ingredients (seasoning and oil) in a bowl.
  • Either leave the fish whole or cut it in half if it will be too big/long for your baking dish.
  • Season the fish thoroughly with the prepared seasoning blend. Place the seasoned fish in a plastic container or glass bowl, cover, and place in the refrigerator for about 30 minutes or longer to marinate for more flavor.
  • Remove the fish from the refrigerator and bring it to room temperature. Turn on your oven to 415 degrees Fahrenheit.
  • When the oven is hot enough, place the fish in a prepared baking dish and bake it for 30 minutes to 45 minutes, depending on size and thickness.
  • Remove and serve immediately with your favorite side dishes.
