Turkish Eggplant Salsa - The Lemon Bowl® image

This smoky eggplant dip made with tomatoes and red peppers can be served hot, cold or room temperature.

2 tablespoons extra virgin olive oil
2 cloves garlic (minced)
4 cups cubed eggplant ((no need to peel))
1 teaspoon salt
1 cup red bell pepper (diced)
15 ounces diced tomatoes (fresh or canned)
2 teaspoons cumin
1 teaspoon sugar
1 teaspoon smoked paprika
1/2 teaspoon cayenne (optional)
2 tablespoons lemon juice
minced parsley (optional garnish)

Steps:

  • Heat olive oil in a medium sauce pot over medium-high heat then sauté garlic until fragrant, about 30 seconds. Add eggplant and salt to the pot and fry until eggplant starts to soften, about 5-6 minutes, stirring occasionally.
  • Add peppers to the pan and continue to sauté until softened, about 3-4 minutes. Pour in diced tomatoes and all remaining ingredients to the pan and increase heat to high. Bring pan to a boil then reduce heat to low and simmer until vegetables are soft and flavors develop, about 30 minutes. 
  • Sprinkle with minced parsley to serve.

It doesn't get much easier than this -- lean ground turkey and salsa ranchera combined and made in a pressure cooker such as Instant Pot®. Perfect for tacos, burritos, or even a taco salad.

1 teaspoon canola oil
1?¼ pounds lean ground turkey
1 (7 ounce) can salsa ranchera (such as HERDEZ®)

Steps:

  • Heat oil in a multi-functional pressure cooker (such as Instant Pot®) on the Saute setting. Add ground turkey; cook and stir until mostly browned, about 5 minutes. Add salsa ranchera and stir to combine.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

Be sure the tomatoes you use are top quality! If you cannot find good quality tomatoes, go ahead and used diced canned. Try different chili peppers such as Thai, habanero, etc. DO NOT omit the sumac as it is integral to the recipe. ;)
