1 large onion, quartered
3 garlic cloves
Large pinch ground turmeric
2 tbsp tomato purée
200ml natural yogurt or whole milk
1 tbsp paprika (not smoked)
2 tsp salt
4 large British free-range chicken breasts, cut into bite-size chunks
Vegetable oil to grease
Dried oregano and sumac for sprinkling
Serving suggestions
Lemon wedges, pickles, flatbreads, yogurt, chilli sauce, tomato salad

Steps:

  • Put the onion and garlic in a food processor and whizz to a very fine pulp. Transfer to a sieve lined with a clean J-cloth and set over a large bowl. Bring the cloth around the pulp and squeeze to extract as much juice as you can (it’s best to wear rubber gloves for this, to protect your hands from the smell). Discard the pulp (or save for a tomato sauce base), then mix the juices with the turmeric, tomato purée, yogurt (or milk), paprika and salt. Add the chicken and coat well. Cover and marinate for at least 1 hour or up to 24 (see Make Ahead).
  • If you’re using wooden skewers, soak them in cold water to stop them burning. Heat the grill to as high as it will go (or see tips). Thread the chicken onto 4-8 metal or wooden skewers, depending on how long they are. Line a baking tray with foil and drizzle with a little oil, then lay the chicken skewers on top. Grill for 10 minutes or until the chicken is blackened and completely cooked through (no need to turn it). Scatter with oregano and sumac, then serve immediately with your choice of accompaniments.

500 gr Lamb meat from leg of lamb (cube cut)
100 gr tail fat (cube cut)
2 red carmen pepper (mezzaluna cut)
3 tbsp red hot chili pepper flakes
1 teaspoon salt

Steps:

  • Combine lamb meat cubes and tail fat cubes by using mezzaluna knife. It will take 30 minutes to combine lamb meat and tail fat well together. 
  • Once the lamb meat cubes and tail fat cubes are combined well by using mezzaluna knife, they will look like ground meat.
  • Combine mezzaluna cut red carmen pepper, red hot chili pepper flakes and salt with the mix and use mezzaluna knife again to combine all them well. It will take additional 10 minutes to combine all the mix well. 
  • Put the kebab meat on to the skewers. (You can use water to prevent the kebab meat to stick on your hand while putting the meat on to the skewers.) 
  • Put the skewers on a charcoal grill and cook around 15-20 minutes. While grilling, don't forget to flip the each side of the Kebab continuously to keep the tail fat's and ingredients' juice in the meat.

  • Place kebabs on grill. Do not try to turn them until they begin to unstick from the grill, 3 or 4 minutes. Turn kebabs and grill the other side 3 or 4 minutes; turn. Continue cooking and turning until chicken is no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

    1. Place 12 wooden skewers into a large roasting tray of cold water to soak – this will stop them from burning.
    2. Peel the garlic and ginger, then finely grate and place into a large mixing bowl.
    3. Add the yoghurt, passata, 1 tablespoon of oil and the spices, then mix well.
    4. Slice the chicken into bite-sized chunks and add to the bowl, then season with a tiny pinch of sea salt.
    5. Toss everything together to coat, then cover with clingfilm and place in the fridge to marinate for around 2 hours.
    6. Meanwhile, halve and deseed the pepper, then roughly chop into chunks, roughly the same size as the chicken.
    7. Remove the skewers from the tray, discard the water and wipe the tray dry.
    8. Divide and thread the ingredients between your skewers – don’t push them too close together otherwise they won’t cook properly, then place onto the tray.
    9. Put the griddle pan on a high heat to warm up (or you could cook them under the grill or on the barbecue).
    10. Drizzle the skewers with a little oil, then place onto griddle and cook for 10 to 15 minutes, or until cooked through, turning every 2 minutes to get nice and golden on all sides – you may need to work in batches.
    11. Once cooked, transfer the kebabs to a platter and serve with a fresh zingy salad and some rice or flatbreads.
