This easy turkey chili is a weeknight dinner the whole family will love.

extra-virgin olive oil

red onion, finely chopped

green Bell Pepper, chopped

1 1/2 lb.

ground turkey

Kosher salt

Freshly ground black pepper

cloves garlic, minced

2 tbsp.

tomato paste

1

(28-oz.) can chopped tomatoes 

1

(15-oz.) can black beans, rinsed and drained

1

(15-oz.) can kidney beans, rinsed and drained

1 1/2 c.

low-sodium chicken broth

2 tsp.

chili powder

1 tsp.

ground cumin

1 tsp.

dried oregano

Shredded cheddar, for garnish

Thinly sliced green onions, for garnish

Steps:

  • In a large skillet over medium-high heat, heat oil. Add onion and pepper and cook until beginning to soften, about 4 minutes. Add ground turkey and cook, stirring occasionally, until turkey is golden (it doesn't have to be completely cooked through at this point). Season with salt and pepper, then stir in garlic and tomato paste and cook until fragrant, about 2 minutes. Transfer mixture to a slow cooker. To the slow cooker, add tomatoes, black beans, kidney beans, chicken broth, chili powder, cumin and oregano. Cook on high for 4 hours, until chili has thickened. Check for seasoning and season with salt and pepper to taste. Garnish with cheese and green onion, if desired.

1 Head of garlic
1 Onion (large, yellow or white)
5 sprigs fresh thyme
3 sprigs fresh rosemary
1/2 tablespoon salt
Freshly ground pepper
1 teaspoon Dry garlic powder
1 teaspoon Onion powder
1 teaspoon sweet paprika
1 tablespoon Extra virgin olive oil
2 cups Turkey drippings from slow cooker (if you have less, add turkey or chicken broth)
1/2 cup Milk
1-2 tablespoons Corn starch
1 tbsp Lemon Juice ((optional))
Salt and pepper to taste

  • Grease a large slow cooker with cooking spray. Roll a large piece of aluminum foil into a rope and then fold the rope into an oval. Place in slow cooker, creating a rack for the turkey.  In a small bowl, whisk together brown sugar, chili powder, paprika, and garlic powder. Pat turkey dry with paper towels and season generously with salt and pepper. Press sugar mixture all over turkey, then place in slow cooker, breast side up.  Whisk together chicken broth, soy sauce, and honey and pour into bottom of the slow cooker. Cook on low for 3 to 4 hours, until a thermometer inserted into thickest part of the breast reads 165°.  Heat broiler. Transfer turkey to a rimmed baking sheet and broil until skin is crispy and golden, 3 to 4 minutes. Let rest 15 minutes before slicing. Garnish with parsley and serve.
