¼ cup fat-free mayonnaise
1 tablespoon commercial pesto
1 teaspoon fresh lemon juice
½ teaspoon dried oregano
? teaspoon black pepper
4 (2-ounce) French bread rolls
2 cups trimmed arugula
8 ounces thinly sliced cooked turkey breast
8 (1/4-inch-thick) slices tomato
4 (1-ounce) slices part-skim mozzarella cheese

Steps:

  • Preheat broiler.
  • Combine first 5 ingredients.
  • Cut rolls in half horizontally; spread mayonnaise mixture evenly over cut sides of rolls. Divide arugula, turkey, and tomato slices evenly among bottom halves of rolls; top each with 1 cheese slice. Place bottom halves of rolls on a baking sheet. Broil 2 minutes or until cheese melts. Cover with top halves of rolls.

¼ cup refrigerated pesto
8 slices multigrain bread
12 ounces sliced roasted skinless turkey breast or lower-sodium deli turkey
8 ounces fresh mozzarella cheese, torn into small pieces
1 tablespoon extra-virgin olive oil

Steps:

  • Spread 1/2 tablespoon pesto on 1 side of each slice of bread. Top 4 of the slices evenly with turkey and cheese. Top with remaining bread slices, pesto-side down. Brush the outer sides of the sandwiches evenly with oil.
  • Heat a large nonstick skillet over medium heat. Add 2 sandwiches; cook until golden brown and the cheese is melted, 2 to 3 minutes per side. Repeat with the remaining 2 sandwiches.
