Simple Chocolate Truffles With Toppings | Foodtalk image

Number Of Ingredients 4

8 oz high-quality chocolate bars, finely chopped
2/3 C heavy cream
Toppings: crushed nuts, crushed espresso beans, shredded coconut, diced chocolate chips, cocoa powder, beet powder, hazelnuts
optional-1 Tbsp room temp butter

Steps:

  • Dice the chocolate and put in heat-proof safe bowl.
  • Heat the heavy cream in a saucepan until simmering.
  • Pour the cream over the chocolate and butter and let set for 5 minutes--don't touch or stir yet!
  • Stir until completely melted and place plastic wrap over the top directly on the chocolate. Refrigerate for 1-2 hours.
  • Scoop into 2 tsp size balls and roll. It will be very sticky! I would use Pam spray on your hands to minimize that a bit. Roll in desired toppings.
  • You can store at room temp for 3-4 days, or in the fridge for up to 2 weeks (if they last that long)!

12 ounces bittersweet chocolate, chopped
? cup heavy cream
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan over medium heat, combine chocolate and cream. Cook, stirring, until chocolate is melted and mixture is smooth. Remove from heat and whisk in flavoring. Pour into a small dish and refrigerate until set, but not hard, 1 1/2 to 2 hours. Use to fill candies or form balls and roll in toppings.
