- In a large pot of salted boiling water, cook penne according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to pot. Meanwhile, in a large skillet over medium heat, sear chicken until cooked through, 6 to 8 minutes, flipping once. Add pesto, roasted red peppers, chicken, and 1/4 cup pasta water to pot and toss until combined and creamy. Season with salt and garnish with Parmesan.
