Is it a fruit or is it a vegetable? All we know is that we want to slather this savory tomato jam on everything. Packed with flavor thanks to fresh rosemary and tangy balsamic, with a thick texture due to the nature of Roma tomatoes, it's the perfect condiment for amping up a grilled cheese or burger. It also makes a great addition to pasta, with a few spoonfuls adding a little homemade flavor to store-bought sauce.

Yield About 1 1/2 cups (2 tablespoons per serving)

Number Of Ingredients 6

1 pound Roma tomatoes, diced
1/2 teaspoon kosher salt
1/4 cup fresh chopped rosemary
1 tablespoon brown sugar
1 teaspoon freshly ground black pepper
1/4 cup balsamic vinegar

Steps:

  • Place tomatoes in a medium size pot over medium-low heat. Sprinkle with salt and cook for about 5 minutes or until the tomatoes have begun to release liquid. Add the remaining ingredients and turn the heat down to low. Continue cooking for about 20 minutes, or until a jam-like consistency is reached. Pour in a jar and seal tightly. Keeps in the fridge for about a week.

Mellow, slightly sweet and devoid of the overt fishy flavor that's polarizing for so many, this slow-cooker cod is perfect for pairing with a show-stopping sauce like this tomato-balsamic jam. Diced pancetta provides a salty counterpart to the sweet onion, tomatoes, vinegar and honey and gives the jam complexity. Garnish with fresh thyme sprigs, if desired.

3 ounces diced pancetta (about 1/2 cup diced)
1 cup chopped sweet onion (from 1 onion)
1 pint cherry tomatoes, halved
1 tablespoon balsamic vinegar
1 tablespoon honey
1 teaspoon fresh thyme leaves
½ teaspoon black pepper
4 (6 ounce) skinless cod fillets
¼ cup fresh flat-leaf parsley leaves

Steps:

  • Cook the pancetta in a nonstick skillet over medium, stirring occasionally, until crisp, about 5 minutes. Transfer the pancetta and drippings to a 5-quart slow cooker. Add the onion, tomatoes, vinegar, and honey, stirring to combine. Partially cover, and cook on HIGH until the mixture is syrupy and jam-like, about 4 hours.
  • Stir together the thyme and black pepper in a small bowl. Sprinkle over the cod fillets. Place the fish on the tomato mixture in the slow cooker; cover completely, and cook on LOW until the fish flakes easily with a fork, about 25 minutes. Serve the cod with the tomato jam; sprinkle with the parsley, if desired.

  • Heat up the remaining 2 tablespoons of vegetable oil in a medium saucepan. Toss in the onion and cook until the onion becomes soft. Add in the chopped tomatoes, chile, balsamic and saffron. (Sub a bit of turmeric if you don't have saffron.) Cook the mixture down until it gets thick. Allow the mixture to cool to room temperature before you serve. After the mixture was cooled, I took an immersion blender and blended it just a bit, so it was a bit smoother but still had chunks, as a personal preference.
