3 pounds boneless lean beef chuck
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon cooking oil
4 large onions, chopped
3 tablespoons chili powder
3 tablespoons yellow cornmeal
1 tablespoon bottled minced garlic
1 tablespoon ground cumin
2 teaspoons dried oregano, crushed
¼ teaspoon cayenne pepper
1 14 ounce can beef broth
1?¼ cups water
1 tablespoon packed brown sugar
Chopped onion, optional

Steps:

  • Trim fat from meat. Cut meat into 1/2-inch pieces. Sprinkle meat with 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper. In a 4-quart Dutch oven, brown beef, one-third at a time, in hot oil. (Add more oil during cooking, if necessary.) Remove beef from Dutch oven.
  • Add the 4 chopped onions to Dutch oven; cook over medium-high heat about 5 minutes or until tender. Stir in chili powder, cornmeal, garlic, cumin, oregano, and cayenne pepper; cook for 30 seconds.
  • Stir in browned beef, beef broth, the water, brown sugar, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Bring to boiling; reduce heat. Cover; simmer for 1-1/2 to 2 hours or until meat is tender. If desired, top each serving with additional chopped onion.

2 lbs. Ground Beef, (90% lean)
1 Tbsp. vegetable oil
1 large onion, chopped
1 green bell pepper, chopped
1 jalapeño pepper, ribs and seeds removed, chopped
4 garlic cloves, minced
2 Tbsp. chili powder
1 Tbsp. paprika
1 Tbsp. ground cumin
1 tsp. dried oregano
½ tsp. freshly ground black pepper
½ tsp. Kosher salt
1 can (8 oz.) tomato sauce
1 can (10 oz.) diced tomatoes & green chilies, undrained
1 cup beer
½ cup (2 oz.) shredded reduced-fat sharp cheddar cheese
Sour cream
Sliced green onions
Shredded cheddar cheese

Steps:

  • Heat a large Dutch oven over MEDIUM-HIGH heat; add oil. Lower heat to MEDIUM; add onion, bell pepper and jalapeño pepper stirring occasionally until tender, approximately 4-7 minutes. Add garlic and cook for an additional 1 minute.
  • Add Ground Beef. Cook for 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Pour off drippings, as necessary.
  • Add chili powder, paprika, cumin, oregano, black pepper and salt; cook 1 minute.
  • Add tomato sauce, diced tomatoes & green chilies, and beer; bring to a boil.  Reduce heat to low, cover and cook 30 minutes. Add shredded cheese. Serve with your favorite toppings.

  • In a small saucepan, bring 1 cup stock to a boil. Add chilies. Remove from heat; cover and let stand 20 minutes. Remove and discard stems from seeds from chiles. Put chiles and soaking liquid into a food processor or blender. Cover and process until smooth., In a large bowl, combine 4 tablespoons flour , salt and pepper. Add beef, a few pieces at a time, and toss to coat. , In a Dutch oven, heat oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon. Add onion to same pan; cook and stir until tender, 5-7 minutes. Add garlic; cook 1-2 minutes. Add remaining 2 cups broth, stirring to loosen browed bits from pan. Stir in chile mixture. Return beef to pan; bring to a boil. Reduce heat; simmer, uncovered until beef is tender, 1-1/2 to 2 hours. Skim fat. Stir vinegar, cilantro, brown sugar and cumin; simmer another 10 minutes. If desired, serve with tortillas, sour cream, lime wedges and additional cilantro.

This is some of the best chili in the world! I developed this chili recipe while cooking on the CASI chili circuit and won numerous awards with it! If you can not find the Sazon Goya just omit it. I do not add any "Floaters" (Beans, Onions, Peppers,...) but you may if you would like to. The recipe is cooked by using dumps...this is important not to overpower one spice over the other. I usually premix each dump during preparation and put in bowls or plastic storage bags and label accordingly. Enjoy!
