4 libras de harina de maíz
Hojas de plátano
3 libras manteca de cerdo
ajo, culantro, cebolla, chile dulce, tomate, especias y sal
1 lata de maiz
1 lata de chicharos
Papas (arroz y garbanzos)
Pasas o aceitunas (opcional)
Carne de cerdo o de pollo en trozos pequeños
Sazonador de carne de cerdo (costilla o de pollo (según sea el caso))

Steps:

  • – La carne o recado: Se corta en trozo pequeños. En una licuadora agregamos la cebolla, chile dulce, ajos, sal, pimienta y lo licuamos con una taza de agua, agregamos sazonador de carne, un poco de cominos si asi lo quiere. Una vez lista la mezcla, se agrega a la carne y se pone a cocer a fuego medio.
  • – La masa: Agregamos las 4 libras de harina de maiz en un recipiente y agregamos 6 tazas de agua, lo mezclamos y lo poemos a cocer en fuego lento,luego se agrega la manteca de cerdo y sal. Puede agregar un poco del caldo de la carne cocida para darle mas sabor. La masa debe cocerse durante aproximadamente media hora y debe moverse constantemente hasta que tenga una consistenciasuave.
  • – Para envolver: Se envuelven en hojas de plátano, puede conseguir las hojas en el mercado. Las hojas de cuecen en rollo a fuego medio durte media hora, hasta que se tornen de color verde obscuro. Luego se estirar y se recortan del tamaño de una hoha de papel de oficio.
  • – Preparación del tamal: En el centro de la hoja de plátano, se coloca una cucharada grande de masa, del tamaño que usted quiera el tamal; hace un hueco, pone un poco de recado, un trozo de carne y otro poco de recado. En el mismo hueco se le coloca una pequeña cantidad de maiz, chicharos, una aceituna y papa (partida en julianas y previamente cocida).
  • * Puede agregar arroz y pasas al tamal si asi lo desea. Debe hacerlo al poner la cucharada de masa en la hoja.
  • Cuando ya tiene el tamal armado en la hoja, se envuelven procurando que quede bien ajustado, si prefiere puede utilizar dos hojas para envolver cada tamal. Luego los amarra con la corteza seca de la mata de plátano y listo, puede agregarlos en una olla para cocerlos; si no tiene la corteza para amarrarlos, utilice una cuerda de mezcal.
  • – Cocción: En el fondo de la olla se pone una tapadera o bien las venas de la hoja de platano, después se colocan unas cuantas hojas de plátano y agrega los tamales por capas. Se cubren con agua y se dejar cocer a fuego medio alto durante tres horas más o menos.
