My family loves Mexican food so I came up with a soup which features all of those wonderful flavors. I serve this soup with tortilla chips on the side.—Roxanne Barone, Billings, Montana

Yield 10 servings (2-1/2 quarts).

Number Of Ingredients 9

2 pounds ground beef
1 medium onion, finely chopped
1 can (28 ounces) tomatoes
1 can (15 ounces) tomato sauce
1 cup water
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14 to 16 ounces) whole kernel corn, drained
1 envelope taco seasoning
Shredded cheddar cheese, sliced avocado, chopped tomato and corn chips, optional

Steps:

  • In a large saucepan, brown beef and onion; drain. Puree the tomatoes in their liquid; add to pan with tomato sauce, water, beans, corn and taco seasoning. Bring to a boil. , Reduce heat and simmer for 5 minutes. Top each serving with cheese, avocado and tomato, and serve with chips if desired.

1-1/2 pounds ground beef
1 envelope taco seasoning
1/2 cup water
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup crushed corn chips, divided
1 unbaked pastry shell (9 inches)
1 cup sour cream
1 cup shredded cheddar cheese
Shredded lettuce and sliced avocado, optional

Steps:

  • In a large skillet, cook beef until no longer pink; drain. Stir in the taco seasoning, water and olives. Simmer, uncovered, for 5 minutes, stirring frequently., Sprinkle half of the corn chips into pastry shell. Top with meat mixture, sour cream and cheese. Cover with remaining corn chips., Bake at 375° for 20-25 minutes or until crust is golden brown. Cut into wedges. Top with lettuce and avocado if desired.
