- " Beat the cream cheese in medium bowl until smooth and well softened. Mix in sour cream until well blended. Add spices, then cheese and chicken (eyeball the amount of chicken- you don’t want the mixture too loose or too dry, it should have a nice spreadable consistency). Add Rotel. Heat a skillet over medium heat. Grease pan with either spray oil or butter. Fill half a tortilla with about ? cup chicken mixture. Fold tortilla over and place in skillet. Toast each side until golden brown, about 2 minutes per side. Serve warm! Notes There are SO many variations you can use with this recipe. -use a taco spice packet to taste instead of individual spices. -use fresh monterey jack cheese. -Loosen the mixture with taco sauce (maybe even from Taco Bell!) -add more or less chicken/cheese depending on your preference"

I used to love these when I was younger, I could eat two in one sitting! I haven't had fast food in a year or two, but these taste like I remember Taco Bell's quesadillas tasting. I hope you enjoy it as much as I do.

Steps:
- Combine sauce ingredients and stir until smooth.
- Grill chicken in vegetable oil and cut into thin slices.
- Preheat skillet over medium heat.
- One at a time, lay tortilla into hot skillet and sprinkle with 1/4 cup of each shredded cheese and 1/2 cheese slice on one side of the tortilla.
- Arrange about 1/4 cup chicken slices over tortilla on the same half covered with cheese.
- On the empty side, spread about one tablespoon of sauce.
- Fold over, and press gently with spatula.
- Cook until cheese is melted and slice each into 4 pieces.

Toss chicken with half of the quesadilla sauce. Set the rest aside for dipping. In a large skillet over medium-high heat, add a flour tortilla. Top with 2 slices of American cheese and ½ cup chicken, then sprinkle with ½ cup Monterey Jack. Place second tortilla on top. Cook until the bottom tortilla is golden, about 2 minutes, then flip and cook until the second tortilla is golden and the cheese has melted, about 2 more minutes. Repeat process with remaining ingredients to make 3 more quesadillas. Slice into wedges and serve warm with remaining sauce for dipping.
