Sitting half way between rice pudding and cheese cake, this treat will make you sing. It's sweet and its filling, it has blueberries. What more could you want?

Steps:
- Preheat the oven to 350 degrees F and grease a 9x9 inch cake pan.
- blend the egg in a medium sized bowl.
- drain and empty the package of tofu into the bowl.
- mash well, and mix thoroughly with the egg (the consistency should be thick but the tofu should form little globules that look like cottage cheese balls).
- pour the vanilla, brown sugar and honey into the mixture, mix well.
- pour the milk evenly over the contents, mix.
- add the baking powder, cinnamon and flour.
- Mash in the margarine and combine with the brandy.
- spoon in the preserves and make sure the batter is consistent.
- Pour mixture into cake pan.
- Throw handfuls of blueberries into the mixture or decorate the surface with them.
- Bake at 350 F for 90 minutes.
- Place cake pan straight into refrigerator for 2h.
- serve cold or warm.

Steps:
- Dissolve the gelatin powder into boiling water. This can be done in a large bowl, using a whisk.
- If your silken tofu is too watery, use a tofu press to squeeze out the excess moisture.
- When you're happy with the texture, slice the silken tofu into small pieces.
- Place your sliced tofu into a food processor, add in honey and soy milk. Blend until well combined.
- Dump the ingredients into a large bowl, and pour in your dissolved gelatin and almond extract.
- Gently mix the ingredients using a whisk.
- Pour the mixture into ramekins and leave them to set up in the refrigerator for 1 hr.
- While the mixture is setting in the fridge, begin making the strawberry sauce.
- Place the strawberries, honey, and lemon juice into a food processor and blend together until silky smooth.
- Remove your tofu pudding from the refrigerator and run a knife gently around the edges to loosen them.
- Place the sweet tofu dessert onto a plate and remove the ramekin.
- Pour over your strawberry sauce.
- Add extra strawberries or fresh mint to complete your soft tofu dessert recipes.
- Serve and enjoy!
