A spicy Thai noodle dish with chicken and vegetables.

½ pound dried rice noodles
1 pound skinless, boneless chicken breast halves
1 dash soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, grated
10 mushrooms, halved
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1?½ tablespoons red chile sauce
¾ cup peanut sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook rice noodles according to package directions.
  • Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.
  • In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cucumbers; cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through.
  • Toss cooked rice noodles with saute. Garnish with sesame seeds.

Sweet & Spicy Udon Noodles – The Chutney Life image

14.2 oz package of udon noodles
2 tbsp minced garlic
2 medium shallots, thinly sliced
1 tsp grated ginger
8 oz shittake mushrooms sliced
1 baby bok choy, chopped
2 tbsp oil
2 tbsp dark soy sauce
1 tbsp hoisin sauce
1 tbsp sweet thai chili sauce
1 tbsp gochujang
1 tsp gochugaru or crushed red chili flakes
1 tsp rice wine vinegar
1/2 tsp sesame oil

Steps:

  • Cook or prepare the noodles according to package directions. I had udon noodles that did not require boiling but I did rinse them with hot water to simply help loosen them up. Follow the directions for whichever type of noodles you decide to use.
  • Heat 2 tbsp of oil in a large wok or pot over medium high heat. Once the oil is hot, add the shallots and stir until they become soft.
  • Next, add the mushrooms and cook until the mushrooms are for just about tender but not too soft. Reduce the heat to medium/low, add the garlic, ginger, bok choy, and stir until garlic is fragrant and bok choy starts to slightly wilt.
  • Add the noodles, sauce, sesame seeds and stir until well combined and noodles are heated through.
  • Serve hot and fresh!!

Add 1/4 cup water; cover and cook 3 minutes. Uncover and cook 2 minutes. Stir in spinach until wilted. Place potato mixture in a bowl. Add remaining 1 tablespoon oil to pan. Add tofu; sauté 4 minutes, stirring occasionally. Combine remaining 1/4 cup water, remaining 1/4 teaspoon salt, coconut milk, almond butter, and curry paste in a bowl. Add 1/2 cup sauce to potato mixture; toss. Divide potato mixture among 4 bowls; top evenly with tofu, remaining 1/2 cup sauce, and cashews. Serve with lime wedges.
