1 cup Original Bisquick™ mix
1/2 teaspoon pepper
2 eggs
1 lb boneless skinless chicken breasts, cut into cubes
1/4 cup vegetable oil
3 medium carrots, cut diagonally into 1/4-inch slices (1 1/2 cups)
1 medium green bell pepper, cut into strips (1 cup)
1 small onion, thinly sliced, separated into rings (1/3 cup)
1 can (20 oz) pineapple chunks, drained
1/2 cup sweet-and-sour sauce
Cooked rice, if desired

Steps:

  • In large resealable food-storage plastic bag, mix Bisquick mix and pepper.
  • In medium bowl, beat eggs slightly. Stir in chicken until coated. Using slotted spoon, remove chicken from eggs; place in bag with Bisquick mix. Seal bag; shake bag until chicken is coated.
  • In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add carrots; cook 2 minutes, stirring frequently. Add bell pepper and onion; cook 2 minutes longer, stirring frequently. Remove from skillet.
  • In same skillet, heat remaining 3 tablespoons oil. Add chicken; cook, stirring frequently, until golden brown on outside and no longer pink in center. Add vegetables; cook about 2 minutes, stirring frequently, until hot. Stir in pineapple and sweet-and-sour sauce; cook until hot. Serve over cooked rice.

I couldn't find exactly what I was looking for, so I combined two of my favorite recipes. Crispy fried chicken in an Asian sweet and sour sauce.

1 pound skinless, boneless chicken thighs, cubed
¼ cup shoyu (soy sauce)
½ cup oil for frying, or as needed
½ cup all-purpose flour
5 tablespoons cornstarch, divided
? teaspoon ground black pepper
¾ cup white sugar
1 cup water, divided
½ cup white vinegar
½ large yellow onion, cut into chunks
1 (8 ounce) can pineapple chunks, drained
1 large green bell pepper, cut into chunks

Steps:

  • Combine chicken and soy sauce in a glass or ceramic bowl and let marinate in the refrigerator for 1 hour.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Heat oil in a large wok to 350 degrees F (175 degrees C).
  • While the oil is heating, whisk flour, 2 tablespoons cornstarch, and black pepper together in a shallow dish. Dredge chicken in flour mixture.
  • Fry chicken in batches in the hot oil until golden brown and crispy and no longer pink in the centers, 5 to 8 minutes per batch. Remove to a plate.
  • Discard any oil remaining in the wok. Return the wok to medium-high heat and add sugar, 1/2 cup water, and vinegar. Heat through, stirring frequently until sugar dissolves. Add onion and continue cooking for 1 minute.
  • Meanwhile, mix remaining cornstarch into remaining 1/2 cup water and stir until completely mixed. Add to vinegar mixture in the pan along with pineapples and bell pepper chunks. Continue cooking until sauce thickens and bell peppers are just cooked, about 3 minutes. Add chicken and toss to coat.

  • Heat the oil in a large frying pan or wok. Add the chicken and cook until browned on both sides. Add the onion, and garlic and fry for a couple of minutes, stirring well. Throw in the peppers, baby sweetcorn and stirfry for 3-4mins until softened. Make the sauce by mixing the ketchup, Kikkoman Soy Sauce, white wine vinegar, sugar and cornflour in a small bowl.
