This dish has not one, but three of our favorite green ingredients, including our Traditional Basil Pesto.

Number Of Ingredients 6

1 (6.3 ounce) jar Barilla® Traditional Basil Pesto
1 (16 ounce) package Barilla® Farfalle
1 ripe avocado, halved, pitted and peeled
5 cups assorted baby greens such as baby kale, arugula, or spinach
6 leaves Fresh basil leaves, torn
1 teaspoon Shaved Parmesan cheese

Steps:

  • In the bowl of a food processor add the Traditional Basil Pesto and avocado; mix to combine; set aside.
  • In a large pot bring 4 to 6 quarts of water to a rolling boil; add salt to taste and the Farfalle; stir gently.
  • Cook pasta according to package directions; remove from heat and drain well, reserving 1/2 cup pasta cooking water.
  • Return pasta to pot; stir in the baby greens and Traditional Basil Pesto mixture; add pasta water as needed to reach desired consistency.
  • Serve topped with fresh basil leaves and Parmesan, if desired.

    1. Heat the oil in a large pan over a medium heat. Cook the leek and potato for 10 minutes or until soft, adding a teaspoon of water if needed. Add the garlic and cook for a further minute.
    2. Meanwhile, simmer the broccoli in a large pan of boiling water for 3 minutes, adding the peas for the final minute. Drain (saving 600ml of the cooking water) and plunge the vegetables into cold water to retain their colour.
    3. Add the stock and vegetable water to the leek and potato and bring to the boil. Stir in the broccoli and peas, along with the spinach, and cook for 2 minutes.
    4. Remove from the heat. Transfer the mixture to a blender, adding the coriander, and blend until smooth (you may need to do this in batches).
    5. Return to a clean pan to reheat if necessary. Season with pepper and serve.
    Top tip: plunging green vegetables into ice cold water after cooking helps them retain their vibrant colour.
