Number Of Ingredients 7

2 lbs of Large Cremini Mushrooms or White Button Mushrooms, cleaned
1 ? cups of Homemade Fresh Breadcrumbs
? cup of Parmiggiano Reggiano
3 Cloves of Garlic, minced
3 Tbsp of Fresh Chopped Parsley
4 Tbsp of Olive Oil
Salt and Pepper to taste

Steps:

  • 1) Preheat the oven to 400 degrees. 2) In a large bowl, combine together the breadcrumbs, parmiggiano, parsley, garlic, olive oil and salt and pepper. 3) Hollow out the mushrooms with a small spoon and spoon in this mixture into the mushrooms and place them in an oiled baking dish on a single layer. 4) Drizzle a little more olive oil on top and bake them for about 20 mintues or until the tops are golden brown.

We were very impressed with these stuffed mushrooms. The chopped stems, when cooked, soak up all the savory flavors and give the stuffing the perfect amount of moisture. Garlic and Parmesan give the mushrooms an Italian flair and the homemade bread crumbs give a nice texture. Cheddar cheese melted on top adds that extra sharpness that puts them over the top. These stuffed mushrooms are so good, you can't eat just one.

Number Of Ingredients 11

14 large white button or cremini mushrooms; cleaned, stems removed and reserved
3 tablespoon(s) butter
4 clove(s) garlic; minced
1 1/4 cup(s) fresh bread crumbs
- reserved mushroom stems; chopped fine
1 teaspoon(s) dried oregano
5 tablespoon(s) Parmesan cheese
1 tablespoon(s) fresh chopped parsley or 1 teaspoon dried
- salt/pepper; to taste
FINAL TOPPING
1 cup(s) finely shredded cheddar cheese (or cheese of your choice)

Steps:

  • Preheat oven to 325° F.
  • Melt the butter in a small skillet over medium heat.
  • Add the garlic and sauté until softened, being careful not to brown.
  • Add the bread crumbs, chopped mushrooms, oregano, parsley, salt, and pepper.
  • Sauté until bread crumbs are slightly crisp and golden. Add the Parmesan cheese. Mix well. Remove from heat and allow to cool slightly.
  • Spoon the bread crumb mixture into the mushroom caps, packing in firmly.
  • Place on non-stick baking sheet or non-stick sprayed shallow baking dish. Bake until mushrooms and stuffing are heated through, about 30 minutes.
  • Approximately 10 minutes before mushrooms are done, sprinkle shredded cheese topping.
  • Return to oven for the remainder of cooking time. Serve hot or room temperature.
