These fillets are bursting with fresh vegetables. "I discovered this memorable recipe 40 years ago in college," relates Mildred Doucette from Sun City West, Arizona. "It's remained a staple at our house."

2 small carrots, shredded
1 small onion, minced
5 tablespoons butter, divided
4 slices bread, cubed
3/4 cup canned diced tomatoes, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 small cucumber, chopped
1-1/4 teaspoons salt, divided
1/4 teaspoon dill weed
1/8 teaspoon pepper
8 sole or orange roughy fillets (4 ounces)
1/8 teaspoon paprika
8 lemon wedges

Steps:

  • In a large nonstick skillet, saute carrots and onion in 3 tablespoons of butter until tender. Remove from the heat. Stir in bread cubes, tomatoes, mushrooms, cucumber, 1 teaspoon salt, dill and pepper., Place four fillets in a 13-in. x 9-in. baking dish coated with cooking spray. Top each with 1 cup stuffing and another fillet. Sprinkle with paprika and remaining salt. Dot with remaining butter. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork. Cut in half; serve with lemon.

1/4 cup margarine or butter
1/4 cup chopped celery
2 tablespoons chopped onion
2 cups soft bread cubes
1/4 teaspoon salt
1/4 teaspoon dried thyme leaves
1/8 teaspoon pepper
1 (2 to 3-lb.) dressed whole fish*
1/2 teaspoon salt
2 tablespoons margarine or butter, melted

Steps:

  • Heat oven to 400°F. Grease shallow roasting pan. Melt 1/4 cup margarine in medium skillet over medium heat. Add celery and onion; cook and stir until tender. Stir in all remaining stuffing ingredients.
  • Sprinkle inside of fish with 1/2 teaspoon salt. Fill opening with stuffing. Secure edges of fish together with skewers or toothpicks. Place in greased pan; brush with melted margarine.
  • Bake at 400°F. for 45 minutes or until fish flakes easily with fork, basting occasionally with margarine. Remove skewers before serving. To serve, cut into sections by slicing through backbone.

Add 1 clove of garlic and continue to cook for another minute. Add the spinach and cook until just heated through. Season with the salt and pepper, add the breadcrumbs and the cheese and stir to combine. Remove from the heat. If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place fish rolls in a baking pan seam side down.  Bake in preheated oven for 25 minutes. Meanwhile, prepare the sauce: Place a saucepan over medium heat.  Add the other 1 tablespoon olive oil, other half of the onion and garlic.  Saute 5 minutes, until fragrant.  Add tomatoes and cook for about 5 minutes, adjust salt and pepper to taste add Half and half and remove from heat.  Keep warm until ready to use. Note:  You can use the sauce as is or if you are like my son and you don’t like chunks of tomatoes you can puree it. Serve fish with sauce over top as desired.

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.
