This French-inspired side dish makes a great addition to any dinner table, especially holiday dinners. From Mother's Day to Christmas, the fresh sauteed green beans get a nutty crunch from the deeply flavorful toasted almonds. Ready in less than 20 minutes, this family-friendly recipe feeds a crowd. Serve with roasted turkey, chicken or alongside some pan-seared salmon. Experiment with different nuts for different flavor profiles. 2 tsp Olive oil
3 medium clove(s) Garlic clove(s) minced
8 cup(s) Uncooked green snap beans fresh, trimmed, or thawed if frozen
0.5 cup(s) Canned chicken broth or vegetable broth
0.5 tsp Table salt or to taste
0.25 tsp Black pepper freshly ground, or to taste

Steps:

  • Place almonds in a large dry skillet and place pan over medium heat. Cook until nuts are golden brown, shaking pan frequently, about 2 to 4 minutes. Remove nuts from pan; set aside.
  • Heat oil in same skillet over medium-high heat. Add garlic and cook , stirring, 1 minute. Add string beans and sauté 1 minute. Add broth to pan; cover and steam until string beans are crisp-tender, about 3 to 5 minutes. Add salt and pepper; stir to coat. Remove from heat; stir in toasted almonds. Yields about 3/4 cup per serving.

2 pounds fresh green beans, washed and trimmed
2 slices bacon
¼ cup sliced almonds

Steps:

  • Remove both ends of beans, break in half, and wash thoroughly.
  • Place in a large pot and add water 3 to 4 inches from the top. Add bacon and cook until tender.
  • Remove bacon from cooking water and discard. Remove beans and place in a large bowl, add almonds and toss. Serve Hot.
