1 tablespoon olive oil
2 tablespoons minced garlic
kosher salt (to taste)
Black pepper (to taste)
2 tablespoons butter
2 boneless, strip Steak (approx. 225-275 g | 8-10 oz each)
2 large eggs

Steps:

  • In a small bowl combine olive oil, garlic, salt and pepper. Place steaks in a resealable freezer bag and add marinade. Seal bag and allow to sit at room temperature for at least 30 minutes.
  • In medium skillet add butter and heat over medium-high heat. When butter has melted remove steaks from bag and add to pan. Sear steaks for about 3 minutes on each side for medium-rare.
  • When done, move steaks to serving plate and reduce stovetop heat to medium. Using the same pan, crack two eggs and fry over-easy
  • Place fried egg over each steak and season as desired. Serve with roasted potatoes.

Who says you can't make yourself a fancy, classy brunch all at home in the comfort of your own kitchen? For an ultra-hearty start to your morning, fry up some frizzled, sunnyside up eggs and serve them in a warm corn tortilla with grilled flank steak and the works. We topped ours with fresh avocado, queso fresco, radishes, and a flavor-packed chimichurri sauce that melts right into the runny yolks.

Number Of Ingredients 25

For the chimichurri:
1?½ cups fresh cilantro, stems trimmed
1 cup fresh flat leaf parsley, stems trimmed
½ cup extra-virgin olive oil
¼ cup fresh oregano leaves
¼ cup fresh basil
2 tablespoons sherry vinegar
1 teaspoon kosher salt
1 teaspoon fresh lime juice
1 teaspoon freshly ground black pepper
2 cloves garlic
1 small fresno chili, seeded, optional
For the tacos:
¾ pound flank steak
1 tablespoon salt
1 tablespoon chili powder
1 teaspoon freshly ground black pepper
Cooking Spray
6 corn tortillas
6 large eggs
1 avocado, cubed
¼ cup sliced radishes
¼ cup crumbled queso fresco
Fresh cilantro leaves, for garnish
Lime slices, for garnish

Steps:

  • To prepare the chimichurri: In a blender or food processor, combine all ingredients and pulse on high until smooth and uniform.
  • To prepare the tacos: Heat a grill pan over high heat. Sprinkle salt, chili powder, and black pepper over both sides of steak. Spray grill pan with cooking spray and add steak to pan; cook on both sides until desired degree of doneness (about 4-5 minutes per side, for medium rare). Let sit for at least 10 minutes, slice steak against the grain.
  • In a large skillet coated with cooking spray, fry eggs until whites are set, about 3-4 minutes.
  • In a small skillet, warm tortillas one at a time. Top with fried eggs, steak, avocado, radishes, queso fresco, and chimichurri. Garnish with fresh cilantro and limes, if desired. Serve immediately.

  • To Make the Chimichurri: In a small bowl, combine the cilantro, parsley, oregano, garlic, onion, Fresno pepper, and olive oil. Season with salt and let sit for 30 minutes. Stir in the vinegar. Just before serving, taste and reseason with salt if needed. To Make the Sandwiches: Coat a large sauté pan with olive oil and toss in the onion. Season with salt and crushed red pepper and bring the pan to medium-high heat. Cook the onion until soft, aromatic, and lightly browned, 12 to 15 minutes. Transfer to a small bowl and reserve.
