This is a great soup that I found on a bag of Mrs. Grass Egg Noodles. I tried it tonight and found it was delicious enough to post for you all to enjoy. Very hearty soup and easy to prepare in one pot.

Yield 3 quarts

Number Of Ingredients 11

1 1/2 lbs lean sirloin steaks or 1 1/2 lbs round steaks, cut into cubes (I used stew beef)
1 cup chopped onion
3/4 cup chopped bell pepper (I used yellow and red)
2 cloves garlic, chopped
2 tablespoons olive oil
6 cups water
1 (28 ounce) can diced tomatoes
2 tablespoons instant beef bouillon or 6 beef bouillon cubes
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fresh ground pepper
8 ounces fine egg noodles

Steps:

  • In a large kettle, over medium heat, cook and stir steak, onion, bell peppers and garlic in oil until vegetables are tender.
  • Add water, tomatoes, bouillon, basil and pepper.
  • Bring to a boil, reduce heat and simmer, covered for 40 minutes.
  • Add noodles; cook 5 minutes or until noodles are tender.

1 kg high ribs of bull
1 pcs onion
6 cloves garlic
2 tbsp chinese red oil /chilisauce
1 tbsp coriander seeds
1 pcs star anise
2 pcs bay leaf
2 tbsp soy sauce
1 tbsp sesame oil
1.5 liter bull broth
neutral oil
salt
4 pcs spring onion
100 gram bean sprouts
4 pakker noodle
fresh coriander

Steps:

  • The good smell spreads throughout the house when this soup is simmering. It takes some time to make this soup, but it is not a lot of work. The result is a delicious soup with tender meat, good broth and fresh vegetables.
  • In this soup I use high ribs. It fits perfectly in such soups. The meat is very tender and gives a good taste to the broth. Cut the meat into pieces of about 3x3 cm.
  • Find a good pan and add a little neutral oil. When the oil starts to smoke a little, it is ready to fry the meat. Salt the meat a little first and cook quickly on high heat until you get a nice crust. Fry just a little and a little of the meat and place on a plate.
  • Finely chop the onion. When you have finished frying the meat, I add a little more oil and fry until the onion starts to turn golden and brown. Add chili, garlic and spices and cook for a few more minutes. I use whole garlic clove in this recipe as we will strain the broth afterwards. If you have Chinese red oil, it is best not to use a chili sauce like Siracha. Here is a link to how you can make your own Chinese red oil - Den perfekte chiliolje!
  • Pour over the bull broth and the steak you have just cooked. Add soy sauce and sesame oil. Bring the broth to a boil and turn down to low heat so that the meat is just simmering. Let cook for 3 hours with the lid on.
  • When the meat has cooked for 3 hours, you have a very tender meat and a fantastic broth. Strain the broth and pick the meat out of the strainer and place in a separate bowl.
  • Grate or cut the meat into smaller pieces so it is easy to eat with a spoon and put back in the broth.
  • Boil noodles according to the instructions on the package and pour off the boiling water. Put the noodles in a plate and pour over the good broth and plenty of beef. Cut spring onions into thin slices and sprinkle over the soup together with bean sprouts. I also like some fresh coriander on top of the soup. Now the soup is ready to be enjoyed. Good luck.
