BBQ Split Chicken Breasts Recipe - Food Fanatic image

BBQ Split Chicken Breasts are bone-in, which means extra flavor! These babies are juicy and delicious without even trying.

Number Of Ingredients 13

4 bone-ins bone-in, skin-on chicken breast, about 4 pounds
2 cups buttermilk
2 tablespoons hot sauce
2 cloves garlic, chopped
2 teaspoons dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup barbecue sauce, use your favorite
1/4 cup apple juice
1 clove garlic, finely chopped
1 tablespoon mustard
1 1/2 tablespoons hot sauce
1/2 teaspoon black pepper

Steps:

  • For the Marinade: Combine all of the Marinade ingredients in a medium bowl, and whisk together until well mixed. Place Marinade in a large re-sealable plastic bag. (If necessary, split the marinade and chicken into two bags.) Add the split chicken breasts and squeeze any air out of the bag. Refrigerate at least 3 hours or overnight. For the BBQ Basting Sauce: Combine all of the BBQ Basting Sauce ingredients in a small bowl. Whisk together until well mixed; set aside. For the Chicken: Preheat a gas or charcoal grill to medium heat. Meanwhile, remove the chicken from the marinade and shake off any excess liquid. Place the split chicken breasts on the grill bone side down, and cook for 13-15 minutes. Flip chicken breasts and cook skin side down for 5-7 more minutes. Flip chicken breasts over and brush generously with the BBQ Basting Sauce. (Discard any remaining Basting Sauce.) Continue cooking bone side down for another 5-7 minutes, or until internal temperature of the chicken reaches 165°F.

Bone in, split chicken breasts are marinated in Italian dressing and smoked at 250F until an internal temperature of 165F is reached.

1 package split chicken breasts - bone in (skin on.)
Chicken Brine (Recipe Follows)
1 cup water
1 cup apple juice
1/2 cup Italian dressing
1/4 cup salt
1 tbls black pepper
Chicken Dry Rub (Recipe Follows)
2 T Sea Salt
1.5 T Granulated Garlic
1 T Granulated Onion
1 tsp Ground Thyme
1.5 tsp Paprika
1 tsp Black Pepper
1/2 tsp Dry Mustard

Steps:

  • Brine the chicken for at least 1 hour and up to 4 hours
  • Remove from Brine/Marinade, pat dry, and place on tray.
  • Set up your pellet grill for 250F or set your Weber kettle for indirect cooking.
  • Sprinkle both sides of chicken with chicken rub and get some rub under the skin as well.
  • Smoke at 250 using fruit wood until internal temperature reaches 165 (about 1.5 hours).
