Spinach-Parmesan Dip Recipe | MyRecipes image

At first, the spinach will seem to overflow in the skillet, but keep stirring--as it begins to wilt, it reduces in volume. Serve this creamy spinach-parmesan dip with crudités or hearty wheat crackers.

Yield 2 cups (serving size: 1/4 cup)

Number Of Ingredients 9

1 teaspoon olive oil
3 garlic cloves, chopped
¼ teaspoon salt
1 (10-ounce) package fresh spinach
½ cup basil leaves, loosely packed
? cup (about 3 ounces) 1/3-less-fat cream cheese, softened
? teaspoon black pepper
? cup plain fat-free yogurt
¼ cup (1 ounce) grated fresh Parmesan cheese

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add garlic; sauté 1 minute. Add salt and spinach; sauté 3 minutes or until the spinach wilts. Place spinach mixture in a colander, pressing until mixture is barely moist.
  • Place spinach mixture, basil, cream cheese, and pepper in a food processor; process until smooth. Spoon spinach mixture into a medium bowl. Add yogurt and Parmesan; stir to combine. Chill.

1 (10 ounce) package thawed frozen chopped spinach
1 cup mayonnaise
1 (3 ounce) package cream cheese (I use reduced fat cream cheese)
1 onion, peeled and minced
1 garlic clove, minced
1 cup grated parmesan cheese
2 tablespoons grated parmesan cheese
1/8 teaspoon pepper
1/2 teaspoon paprika
2 (2 ounce) French baguettes, thinly sliced

Steps:

  • Squeeze spinach to remove liquid. With a mixer, beat spinach, mayonnaise, cream cheese, onion, garlic, one cup of the parmesan cheese, and pepper until thoroughly combined.
  • Mound mixture in a 3-4 cup baking dish.
  • Sprinkle evenly with 2 tablespoons of parmesan cheese and the paprika.
  • Bake in a 350 degree F. oven until hot in center and lightly browned on top, about 25 to 30 minutes.
  • Serve hot to spread on baguette slices.
