1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded fontina cheese
1/2 cup part-skim ricotta cheese
1/2 cup crumbled Gorgonzola cheese
3 green onions, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 tube (13.8 ounces) refrigerated pizza crust
1 large egg, lightly beaten
1 teaspoon water
1 cup spaghetti sauce, warmed

Steps:

  • Preheat oven to 375°. In a large bowl, combine first seven ingredients. On a lightly floured surface, unroll pizza crust into an 11-in. square. Cut into four squares. Transfer to a greased baking sheet. Spoon spinach mixture diagonally over half of each square to within 1/2 in. of edges., For each calzone, fold one corner over filling to the opposite corner, forming a triangle; press edges with a fork to seal. Cut slits in top. Combine egg and water; brush over calzones. , Bake 12-15 minutes or until golden brown. Serve with spaghetti sauce.

The combination of the three cheeses, spinach and fresh herbs is magical. If you are short on time, you can purchase pizza dough from you local pizza shop or make my One Bowl, No Mixer Pizza Dough.

1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 cup chopped frozen spinach, thawed and drained
1 tablespoon:fresh basil, minced
1 tablespoon fresh parsley, minced
1-dpound raw pizza dough
1 egg
1/2 tablespoon sesame seeds (optional)

Steps:

  • Preparation Preheat oven to 375 degrees F. Lightly grease a cookie sheet with non-stick cooking spray. In a medium bowl, mix cheeses, spinach, basil and parsley. Divide dough into 4 equal parts and roll out on a floured board to about 6 inches in diameter. Spoon equal amounts of filling onto each piece of pizza dough. Fold over and seal edges, pinching closed with fingers or tines of a fork. Place calzones on prepared cookie sheet. Beat egg and brush tops of calzones. Sprinkle with sesame seeds. Bake, uncovered, at 375 degrees for 30 minutes or until dough is golden. Tips Add 1 finely chopped red onion to the cheese mixture to give this dish more zip. For a yummy variation, sprinkle 1 tablespoon of cheddar cheese on top of each calzone instead of the sesame seeds.   • To make calzones divide dough into four portions. Roll 1 portion into an 8-inch circle on a floured surface. Spread approximately 1/3 cup ricotta mixture in center bottom half of dough. Top with heaping 1/3 cup sausage spinach mixture leaving outer 1/2-inch free of filling. Fold top half of dough over filling. Pull edge of lower crust over top; folding and pressing layers together to form a seal. Carefully transfer to greased baking sheet. Cut 3 to 4 vents in top. Repeat with remaining dough. Bake for 15 to 20 minutes until lightly browned. Transfer to cooling rack to keep bottom crust crisp while cooling slightly. Serve with pizza sauce or other sauce for dipping.

  • Coat a baking sheet and some plastic wrap with cooking spray. Place the rolls on the pan and cover with the plastic wrap. Let thaw and rise for 2 to 3 hours. Meanwhile, make the filling: Place the spinach in a kitchen towel and wring dry. Put in a large bowl, separating any clumps. Arrange the calzones on 2 baking sheets lined with parchment paper. Bake until golden brown, 10 to 13 minutes. Drizzle the giardiniera with the oil and vinegar in a large bowl and toss. Add the arugula and sunflower seeds, season with salt and pepper and toss again. Serve the calzones with the salad and the marinara sauce for dipping.
