1/4 cup Worcestershire sauce
3 tablespoons butter or 3 tablespoons margarine, melted
1 teaspoon ground chipotle chile pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground cinnamon
4 cups shelled dry roasted pistachios

Steps:

  • In a bowl, stir together the first 5 ingredients.
  • Add in the pistachios; toss to coat.
  • Arrange nuts in a single-layer on a lightly greased 15x10 inch jellyroll pan.
  • Bake in a 350° oven for 20-25 minutes, stirring after 10 minutes.
  • Arrange in a single layer on waxed paper; let cool.
  • Store in airtight container.

Spiced Pistachios Recipe

5 large egg whites
½ cup sugar
1 tsp. thyme leaves
½ tsp. ground allspice
½ tsp. ground ginger
¼ tsp. cayenne pepper
4 dashes of Angostura bitters
1 lb. unsalted, shelled raw natural pistachios

Steps:

  • Preheat oven to 350°. Whisk egg whites, ½ cup sugar, 1 tsp. thyme leaves, ½ tsp. ground allspice, ½ tsp. ground ginger, ¼ tsp. cayenne pepper, and 4 dashes of Angostura bitters in a medium bowl to blend. Fold in 1 lb. unsalted, shelled raw natural pistachios. Spread out on a rimmed baking sheet brushed with vegetable oil. Bake, stirring every 10 minutes, until golden brown and beginning to crisp, 30–35 minutes. Let cool on sheet on a wire rack. Nuts will crisp as they cool.

Continue to stir until nuts are completely coated with crystalized sugar – the coating should look more like wet sand rather than a syrup.Dump nuts onto a parchment-lined baking sheet, spreading out and breaking apart large pieces. Let cool completely, at least 1 hour (nuts will get crunchier as they cool).Store in an airtight container for up to 1 week (if it’s particularly humid, you may want to store them with one of those little silica packets you often get with freeze dried fruit or kale chips, for instance, to help absorb excess moisture and keep the nuts crunchy).
