Prep Time 10 minutes

Cook Time 0S

Yield 4 servings

Number Of Ingredients 11

4 tsp.

light soy sauce

2 tsp.

dark soy sauce

1 tsp.

toasted sesame oil

1/2 tsp.

salt

1/2 tsp.

sugar

1 tbsp.

Shaoxing wine

1/4 tsp.

ground white pepper

1 lb.

fresh, thin HK-style egg noodles (we use the Twin Marquis brand)

4

scallions, cut into 2" long slices

1/4 c.

white onion, thinly sliced

3 c.

bean sprouts

Steps:

  • MIX the soy sauces, toasted sesame oil, salt, sugar, wine, and white pepper in a small bowl and set aside. BRING a pot of water to a boil and add the noodles. Cook fresh noodles for about 1 minute (or dried for about 2 minutes). Drain, rinse under cold water, drain again very well, and then pat dry with a paper towel. HEAT a wok or large pan over high heat and add 1 tablespoon of neutral oil to coat. Add white parts of the scallion and onion to the pan. Stir fry for about 1 to 2 minutes. Add the noodles to the pan. Add the soy sauce mixture and toss continuously for 2 minutes or until the noodles are golden brown. Add the bean sprouts and the rest of the scallions and toss for 1 to 2 minutes, or until the bean sprouts are slightly transparent but still crunchy.

Total Time 15 minutes

Prep Time 10 minutes

Cook Time 5 minutes

Yield 2

Number Of Ingredients 13

100 g dried egg noodles ( , thinner ones are better)
1 cup bean sprouts remove the roots ( , cut into sections)
6 blanched chives ( , cut into sections)
3 green onions ( , shredded)
1/4 white onion
3 tbsp. cooking oil (, divided )
pinch of salt ( , if necessary )
1 tbsp. light soy sauce
1 tsp. dark soy sauce
1 tsp. Chinese cooking wine
1 tsp. water
1/4 tsp. sugar
1/4 tsp. ground white pepper

Steps:

  • Bring a large pot of water to a boiling and cook the noodles for 1 minute. During the process, separate the noodles. Transfer the noodles out and drain.
  • In a small bowl, mix all the ingredients of the sauce and set aside.
  • Add around 2 tablespoon of oil in wok and slow down the fire, fry until the noodles becomes dry and crispy. However this is only optional if you want a real Cantonese flavor. You can skip this to make a regular chow mein recipe. Transfer the noodles out.
  • Turn up the fire and add another tablespoon of oil, add onion and the white sections of green onions in.
  • Place noodles back, add blanched chive, spring onions and drizzle the sauce. Mix well. Sprinkle some salt if necessary. Serve immediately.

SOY SAUCE NOODLES | LOVE AND OLIVE OIL
Thin egg noodles stir fried until just crisp, and then tossed with a sweet and savory soy-based sauce, crunchy bean sprouts, green onions, and carrot.

Total Time 30 minutes
  • In a small bowl, whisk together soy sauce, dark soy sauce, Shaoxing wine, sesame oil, sugar, and sriracha. Set aside.Bring a large pot of water to a boil. Add noodles and cook for 2 to 3 minutes or until tender. Drain and rinse under cool water. In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high until it shimmers. Add noodles and cook for 2-3 minutes, without stirring, until bottoms are slightly browned. Flip over as best you can and let cook for another 2 minutes. (Even though the noodles will not get entirely crispy, this step helps dry them out so they do not stick and absorb all the flavorful sauce.) Slide noodles onto a plate and set aside temporarily.Return skillet to medium-high heat with remaining 1 tablespoon oil. Add garlic along with white and light green parts of green onion and quickly sautée until fragrant, about 30 seconds. Return noodles to skillet along with soy sauce mixture. Toss well with a pair of tongs or chopsticks, breaking up clumps of noodles as you go, until noodles are entirely coated, about 2 to 3 minutes. Add dark green parts of green onion, carrot ribbons, and bean sprouts and cook for 1 minute more or until  just softened.Remove from heat and divide among bowls; serve immediately.
