12 slices sourdough bread
6 slices cheddar cheese
1/2 pound thinly sliced deli turkey
1/4 teaspoon garlic powder
1/2 pound thinly sliced deli ham
12 bacon strips, cooked and drained
2 tablespoons butter, softened

Steps:

  • On six slices of bread, layer cheese and turkey; sprinkle with garlic powder. Top with ham, bacon and remaining bread. , Spread butter over the top and bottom of each sandwich. Cook on an indoor grill or panini maker for 3-4 minutes or until bread is toasted and cheese is melted.

This flavour packed club sandwich with Quorn Vegan Fillets is a delicious twist on a classic. Simply layer the Vegan Fillets with lettuce and tomatoes on sourdough bread and top off with a curry mango sauce!

4 Quorn Vegan Fillets, defrosted
1 tbsp oil for frying
Salt
Pepper
Curry mayo:
4 tbsp vegan mayonnaise or dairy-free yogurt
1-2 tsp curry powder
1 tbsp agave nectar
salt
Accompaniments:
Sourdough bread, 8 small slices (35 g/portion)
Romaine lettuce, shredded
Tomato, sliced
Onion, finely chopped
1 avocado, sliced

Steps:

  • Grill or fry the Quorn Vegan Fillets for 4-5 minutes on each side.
  • Make the vegan curry mayo by combining all of the ingredients in a small bowl.
  • Toast or bbq the bread. Assemble the club sandwich by layering the bread, lettuce, Quorn Vegan Fillets, tomato, onion and avocado. Top with vegan curry mayo and another slice of bread.

  • Prepare campfire or grill for low heat. Cut a thin slice off top of bread loaf. Hollow out bottom of loaf, leaving a 1/2-in.-thick shell (save removed bread for another use). Spread dressing on inside of hollowed loaf and under the bread top. Layer inside with cheddar, ham, provolone and turkey. Replace top. Place on a piece of heavy-duty foil (about 24x18 in.). Brush loaf with butter. Fold foil edges over top, crimping to seal., Cook over campfire or grill until heated through, 25-30 minutes. Let stand 15 minutes before removing foil. Cut into wedges.
