- Cut ham slice in half. In a skillet, cook ham in butter for 3-4 minutes on each side or until heated through. Meanwhile, drain pineapple, reserving the juice. Set aside two pineapple slices; refrigerate remaining pineapple for another use. , In a bowl, combine cornstarch, pineapple juice, honey, steak sauce and mustard until smooth. Remove ham and keep warm. Add honey mixture to skillet. Bring to a boil over medium-low heat; cook for 1-2 minutes. Return ham to skillet; top with the reserved pineapple slices. Spoon glaze over the top; heat through.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
- Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
- Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.
- Bake in the preheated oven until edges are browned and crisp, 45 minutes to 1 hour. Cool to room temperature before cutting into squares, about 30 minutes.

- Add the flour mixture to the butter mixture in two or three batches, beating until just combined after each addition. Lay out a sheet of plastic wrap. Shape half of the dough into a thick log on the plastic. Wrap the dough in the plastic and shape into a firm 7-inch log (about 2 inches thick). Repeat with the remaining dough to make another log. Chill until firm, at least 3 hours in the refrigerator or 11/2 hours in the freezer. (The dough will keep in the freezer for up to 3 months.) Preheat the oven to 350 °. Line 2 baking sheets with parchment paper. Slice the dough logs into 1/4-inch-thick rounds and place 1 inch apart on the baking sheets. Cut the crystallized ginger into small diamond shapes and press a piece into the center of each cookie, then sprinkle the cookie with turbinado sugar. Bake, switching the pans halfway through, until the edges of the cookies are set, about 12 minutes. Transfer to racks and let cool for 10 minutes on the baking sheets, then remove the cookies to the racks to cool completely. (The cookies will become crisp as they cool.)
