Sausage Green Bean Potato Casserole - 100k-Recipes image

Pair this dish with some garden salad or simply eat alone as it's packed with meat, veg, and carbs - the perfect mix for a delicious dinner time meal!

Number Of Ingredients 12

1 and 1/2 lbs sausage kielbasa or smoked sausage (sliced 1/4 inch thick)
2 lbs creamer potatoes or small red potatoes (washed and sliced in half)
Green beans
1/8 cup vegetable oil
1/4 cup butter
1 cup chopped onions
3 garlic cloves minced
1 tsp Slap Ya Mama seasoning
1 tsp garlic powder
1 tsp pepper
1/2 tsp red pepper flakes
1/4 cup water

Steps:

  • Preheat oven to 200C/400F
  • Add potatoes to a sealable food bag and add the oil, seasoning, pepper and red pepper flakes - shake the bag to coat completely
  • In a pan, fry the sliced sausage along with the water until most of it has evaporated, Remove the sausage and let cool
  • Now add the sausage to the food bag. Melt butter in a pan and cook the onions and garli. Allow this to cool also and then add to the food bag
  • Finally, add the green beans to the food bab also and give it a shake so all ingredients are well combined. Empty the bag into a 9x13 baking dish
  • Cover with foil then cook in the oven for 40 minutes

DEEP SOUTH DISH: SOUTHERN FRIED CABBAGE

Southern fried cabbage is a very simple cabbage dish prepared often as here, with a bit of butter, bacon & onion. I like to add cider vinegar and dried pepper flakes for a little extra flavor punch.

Provided by Deep South Dish

Number Of Ingredients 9

3 slices bacon
4 tablespoons butter, divided
1 cup chopped onion
1 medium to large head of cabbage, chopped (about 10 to 12 cups)
1 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1/4 teaspoon Cajun seasoning (like Slap Ya Mama), or to taste, optional
2 teaspoons apple cider vinegar, optional
Dash dried red pepper flakes, optional

Steps:

  • Chop the bacon and cook in the bottom of a lidded pot until the fat is rendered. Add 2 tablespoons of the butter and the onion and sauté about 4 minutes.
  • Add a splash of water to the bottom of the pot to deglaze the browned bits in the bottom. Add half the cabbage, salt, pepper and Cajun seasoning. Cook and stir for several minutes. 
  • Add the remaining cabbage, stir, reduce to a low simmer, cover and cook for about 30 minutes, or until cabbage reaches the desired consistency, stirring several times.
  • Stir in the remaining 2 tablespoons of butter and the cider vinegar; continue cooking until cabbage begins to caramelize, if desired, otherwise, taste and adjust salt and pepper, and sprinkle with red pepper flakes, if using. 
  • Serve as a side dish, along with some skillet cornbread.
