This steak is tender and deeply flavored with a simple blender marinade of onion, garlic, jalapeños, and beer. These beef tacos, created by San Antonio chef Johnny Hernandez, are so simple to make and so flavorful, they will become your favorite new recipe for the grill. Hernandez marinates top sirloin steaks in a pureed mixture of white onions, garlic, chopped jalapeños, salt, black pepper, beer, and water for several hours. The blender marinade infuses the meat with flavor and also helps tenderize it. Hernandez grills the steak for a few minutes on both sides to medium-rare, then lets the meat rest for a few minutes before slicing to seal in the juices. The steak is sliced thinly and served on tortillas topped with cilantro and red onion, and lime wedges and salsa on the side. Start the meal with tortilla chips and homemade guacamole (and margaritas) for an easy yet impressive menu.

2-3 boneless (1/2-inch-thick) top sirloin steaks
1 pound white onions (about 1 1/2 large onions), chopped
6 garlic cloves
2 jalapeño chiles, seeded and chopped
2 tablespoons kosher salt
6 ounces Mexican beer (such as Corona)
1/2 cup water
1 cup firmly packed fresh cilantro leaves
2 small red onions, thinly sliced
8 (6-inch)s corn or flour tortillas
Lime wedges
Salsa

Steps:

  • Place sirloin steaks in a large ziplock plastic freezer bag. Process white onions, garlic cloves, seeded and chopped jalapeños, kosher salt, black pepper, beer, and water in a blender until smooth. Pour over steaks; seal bag, and turn to coat. Chill 3 hours.
  • Preheat grill to medium-high (about 450°F). Remove steak from marinade; discard marinade. Place steak on oiled grates, and grill sirloin, uncovered, until a thermometer inserted in thickest portion registers 145°F or to desired degree of doneness, 5 to 6 minutes per side for medium-rare. Let steak stand 3 minutes before diagonally slicing across the grain.
  • Toss together cilantro leaves and red onion slices. Heat tortillas on a comal (flat griddle) or according to package directions.
  • Divide steak among tortillas; top with cilantro mixture. Serve with limes and salsa.

1?½ pounds boneless beef top sirloin, cut into thin bite-size slices
½ teaspoon salt
1 teaspoon freshly ground black pepper
crushed red pepper to taste
1 lime
1 (28 ounce) can tomatillos
2 fresh jalapeno peppers, seeded
4 tablespoons canola oil, divided
1 (10.5 ounce) can beef broth
12 (6 inch) corn tortillas
½ large onion, chopped
2 tomatoes, chopped
1 avocado - peeled, pitted and sliced
1 bunch fresh cilantro, chopped
1 lemon

Steps:

  • Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper. Squeeze the lime juice over the meat, and turn until evenly coated. Cover, and refrigerate for 30 minutes.
  • In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture. Cook, stirring frequently, for 5 minutes. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon. Transfer mixture to a serving dish.
  • Heat tablespoon oil in a large skillet over high heat. Stir in 1/3 of the beef, and saute for 1 minute. Transfer to serving dish. Repeat with remaining beef. Meanwhile, heat tortillas in the oven or microwave, according to package instructions.
  • To serve, place two tortillas on top of each other. Add desired amount of meat, spoon over some tomatillo mixture. Top with onions, tomatoes, avocado and cilantro. Garnish with a wedge of lemon, to be squeezed over taco before eating.
