A warming, cold-weather cocktail made using homemade spiced brandy. Omit the spices for a classic sidecar cocktail, or try using bourbon if you can’t find cognac

caster sugar 2 tbsp
spiced cognac or cognac 50ml, (see below)
Cointreau 25ml
lemon juice 25ml, plus a lemon wedge for the glass
cardamom pods 4, bruised
cinnamon stick 1
star anise 1
ginger 2 small slices
cognac 200ml

Steps:

  • To make the spiced cognac, put all of the spices and the ginger in the cognac and leave to infuse for 30-45 minutes, tasting after 30 minutes. Leave for longer if you’d like an extra spicy flavour. This will make enough for four drinks, but if you’d like to infuse a whole bottle (around 70cl), then triple the quantities.
  • To make the sidecar, put the caster sugar on a saucer and rub a lemon wedge round the rim of a small coupe glass. Dip the glass rim into the sugar, like you would a margarita glass with salt. Put the rest of the cocktail ingredients in a cocktail shaker, fill with ice and shake well before straining into the frosted coupe glass.

Try your hand at recreating a classic 1920s cocktail, the sidecar. It's easy to adapt – simply use cognac, or go with equal parts cognac, triple sec and lemon juice

50ml cognac
25ml triple sec
25ml lemon juice
handful of ice
dash of Angostura bitters (optional)

Steps:

  • Put a coupe glass in the fridge to chill. Tip all of the ingredients into a cocktail shaker.
  • Shake well, until the outside of the shaker feels cold, then strain the cocktail into the chilled glass. If the lemon juice is too sharp, add the bitters to taste.
