Shrimp Ceviche with Ketchup Recipe | Allrecipes image

This is a nice entree for any lunch. Is very tasty, different, and easy to cook. The base of the recipe is shrimp, tomato sauce, orange juice, and red onions. Great with a cold beer on sunny days. Serve chilled, with some popcorn or fried green banana slices on the side. If more formal, bread and butter.

Number Of Ingredients 12

2 cups water
1 dash salt
1 pound uncooked medium shrimp, peeled and deveined
½ cup salt
1 red onion, sliced
4 limes, juiced, divided
1 tablespoon corn oil
6 cups fresh orange juice
3 cups ketchup
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh dill

Steps:

  • Bring water and 1 dash salt to a boil in a saucepan. Stir in shrimp. Cook for 1 minute and turn off the burner. Stir until shrimp are light red and slightly curved. Transfer cooked shrimp to a bowl using a slotted spoon. Reserve the cooking water.
  • Combine 1/2 cup salt, red onion, and the juice of 2 limes in a bowl. Stir and let stand for 30 minutes. Rinse onions and transfer them to a large serving bowl. Add oil.
  • Add shrimp, remaining lime juice, orange juice, ketchup, parsley, cilantro, and dill to the bowl with the onions. Add up to 1/2 cup of the reserved shrimp cooking water, if necessary, to thin the sauce. Refrigerate at least 1 hour or until ready to serve.

400 g shrimp ( , around 25g middle size shrimp)
1 cup oil ( , for frying)
2 scallions ( , white part and green part separated)
1 tbsp. ShaoHsing wine
1 tbsp. light soy sauce
1.5 tbsp. ketchup
1/2 cup warm chicken broth or warm water
1 tsp. sugar
salt to taste
1 thumb ginger (, sliced )
2 cloves garlic ( , peel and sliced )

Steps:

  • Use a toothpick to pick the devein part out. Then remove the dark part in the heads too. Wash carefully and then drain completely. Use kitchen paper if necessary.
  • Heat oil in a deep pan until really hot; add shrimp in to fry 15 seconds. They should turn red quickly. Transfer shrimp out and pour off extra oil.
  • Leave in 1 tablespoon of oil, fry garlic, ginger and scallion over slow fire until aroma. Add ketchup and broth. Mix well.
  • Return shrimp, add sugar,light soy sauce and ShaoHsing wine. Continue cook for 2-3 minutes until the sauce is well thickened and stick to the shrimp. Add salt to taste and scallion sections.

This is a very old recipe and I have made it for years with no issues. But if you are in doubt, use a pressure canner. If there's enough acid added I don't think you need to pressure can but some newbies come along and "think" they are experts. :) This has to be one of the best antipasto recipes ever! The original recipe came from one of those cookbooks where everyone submits a recipe but it has been modified. The only reason for this is when my Dad and Sister were making it they weren't sure if you were supposed to drain the olives and pickled onions, ...they didn't and it came out great! The longer you can let it sit the better it taste. It is quite a costly recipe to make so what I do is buy the "sale" items throughout the year and make it up a bit before Christmas, that's why I'm posting it now---watch for sales :)

  • Something sure has changed with Recipe Zaar! When trying to put the ingredients in it was a big pain in the butt for the sizes. I've converted the grams to ounces but I didn't have everything in my cupboard to actually look at so I guessed. But most cans come pretty standard, and the "Frozen Shrimp" is a large bag -- it wouldn't let me put just "large.".
